It’s time for another Roast Post. Here’s what we are currently serving: NICARAGUAN FTO JINOTEGA SHB EP BCT SELECT This Nicaraguan Jinotega coffee is sourced from family farms located more than 4,500 feet above sea level. Joined together by the COOMULFAC Co-op. This is a FT certified organic coffee. Coffee cultivated at these altitudes matures slowly and grows to be harder and denser than beans grown at lower elevations, creating the strictly hard bean (SHB) with inherent consistency and rich taste attributes. The coffee is prepared for export using a standard called European Preparation (EP), meaning the coffee is hand sorted until there are no more than 8 defects per 300 grams of green coffee. In short, a great cuppa joe!

Nicaraguan Organic SHG EP Jinotega Paraiso.
SHG means Strictly High Grown above 1,150 to 1,500 meters above sea level for a denser bean resulting in more flavor.
EP means European Process which requires hand sorting to remove any defective beans.
Coming from five small farms located in the municipality of Jinotega. Juan de Dios Castillo and his wife Miriam Aruaz began buying the land to form the Paraíso farms in the 1980’s with money earned from their tailor shop, which is still in operation today. Much of the coffee business has been passed on to Juan and Miriam’s five children who formed J&M Family Coffee (“J” for Juan and “M” for Miriam) to export high quality coffee without compromising the environment. J&M Family Coffee operates their own wet and dry mill, which gives them full control of processing the coffee.
