Layering flavors:
Lightly Saute carrots, onions, celery, in equal parts 1c each with salt n pepper to tase, add desired chicken pieces per taste ( no more than 6 boneless thighs in mine) Saute til pan needs a good deglazing use water( be careful of steam.)

For twenty mine. Taste broth, season as desired(I like a bay leaf here) add little more water bring back to low simmer. While all this was happening, I was mixing scratch baking powder biscuit dough. At a low simmer, I drop tspn of dough scattered around pot to keep f t on sticking together. After about 46 dumplings give a tiny stir, cover. Turn down simmer for ten minutes. Remove from heat. Remove lid, give a good separating stir then cover and let rest fir ten mins. Give a stir and serve how you wish. Me? I like mine over a good mashed or boiled potato.
