With the unofficial/official kickoff to summer this weekend, make a pot of hot dog sauce and eat on it all weekend, taking the guessing at stress out of āWhatās for dinner?ā That leaves more time for p**p hangs a relaxation!

INGREDIENTS
1 large Yellow Onion, diced
2 cloves Garlic, minced
2 pounds 80/20 Ground Beef
2 tablespoons All-Purpose Flour
2 teaspoons Chili Lime Seasoning, tajin
2 tablespoons Chili Powder
2 teaspoons Kosher Salt, Mortonās
1 teaspoon Fresh Cracked Black Pepper
1 teaspoon Sweet Smoked Paprika
Ā½ teaspoon Roasted Garlic Powder
Ā½ teaspoon Cumin, ground
2, 14-ounce cans Southwestern Style Pinto Beans
1, 14-ounce can Diced Tomatoes with Green Chilis
1, 28-ounce can Diced Tomatoes
8 Costco Ā¼ pound plus Hot Dogs
8 Large Hot Dog Rolls
Finely Diced Onions, for serving
Bacon Bits, for serving
Diced JalapeƱos, for serving
Yellow Mustard, for serving
INSTRUCTIONS
In a heavy-bottomed stock pot or cast iron dutch oven heat 1 tablespoons of vegetable in the bottom and add the onion.
Cook until the onion becomes translucent. Add the garlic and ground beef and cook over medium-high heat until the ground beef has completely browned. Sprinkle the flour over the beef and stir to incorporate. You can skip this step if you are gluten-free, just drain off the excess fat.
Season the beef mixture with the chili lime, chili powder, salt, pepper, paprika, garlic powder, and cumin.
Add the beans, and tomatoes to the pot and stir to combine.
Bring the mixture to a boil then reduce to a simmer. Let the mixture simmer for 2.5-3 hours to thicken and marry all the flavors together.
Serve the chili over hot dogs and top with cheese, onions, jalapeƱos, bacon, and mustard, all optional of course but highly encouraged!
The chili will be ready after about 45 minutes to an hour of simmering. You can make this a two-for-one meal and serve half of this chili on its own with cornbread, sour cream, cheese, and oyster crackers as toppers. If you just want enough for āChili Dogsā cut the recipe in half.

I have to give this guy a spot on the feed. Today would have been his 14th birthday and I LOVED celebrating him with a dog cake of some form every year. Heās been on just rover six months and my heart still misses him deeply.

He was my crumb catcher and best friend. He stood by my cutting board every day when I was in the kitchen. He was my bud, baby boy, sqweegie, squishems, squishy face, and I loved him with all my heart. He taught me to care for more and Iāll always have a place for him in my heart. Until we meet again baby boy, I love you!
