Southwest Shepherds Pie
Ingredients
1 pound lean hamburger or ground meat of your choice
1 onion of choice
1 package frozen mixed veggies or corn
1 can Rotel of choice
4 servings of mashed potatoes (I stirred up some instant, yes I did)
1 box of prepared cornbread (not yet cooked)
Salt and pepper to taste
Tony Chachere’s to taste
1-2 cups shredded cheese of your liking

In skillet:
Saute hamburger and onion until cooked—add seasonings
Add frozen veggies and saute until tender
Add can of rotel

-Spray bottom of 10x14 pan or similar pan
-spread mashed potatoes over bottom of pan
-ladle meat mixture over potatoes
-drop spoonfuls of cornbread mixture over meat mixture

Cook in hot 400 degree oven for 20 minutes
When cooked the top should be nicely browned. Turn off oven and top with cheese!!
