Today we’re clarifying a classic “Painkiller” cocktail using a technique called “Milk-Washing”. The Painkiller cocktail was created in the 1970s at the Soggy Dollar bar in the British Virgin Islands. It calls for Dark Rum, Lime, Orange, and Coconut Cream. Instead of using coconut cream we are using a coconut rum and whole milk to bring the creamy notes this cocktail is famous for. Milk-Washing is a simple technique used for hundreds of years. It clarifies impurities in many ingredients and this makes for an extremely shelf stable cocktail. In fact, bottles of Benjamin Franklin’s famous milk punch were found in Charles Dicken’s wine cellar over 100 years after his death, and were still good! The science behind this technique involves breaking down milk proteins into milk curds. Acidity can separate casein proteins into solid curds, and whey proteins into clear liquid. Whey proteins are what give milk its creamy flavor, so this is perfect for this cocktail. Milk curds are very absorbent, and clump together with other particulate forming bigger and bigger curds. When straining the finished product, the curds form along the bottom of the filter and act as a secondary, ultra-fine filter that clarifies ingredients even further. In this video we pass the batched cocktail through a filter twice, but subsequent passes can result in an even clearer cocktail, however, this can often sacrifice the quality of flavor.
