PAWPAW welcomes winemaker Robin Epperson-McCarthy of Saltbird Cellars! Robinโs ethos is โWine is ultimately a subjective experience. If you like it, drink it, andโฆdo it with zeal!โ She is committed (in the lunatic sense) to making very calculated wines in the rebel way. The Saltbird label represents the culmination of years of trans equatorial wine wanderings.
She applies learned methods from this and other cool climate regions to make unique wines that honor the distinctive maritime terrior in which they are grownโ

From the โkeep it simpleโ files: ๐ฎ Beef coulotte, a super flavorful and deceivingly tender cut from the back end of the bovine. We rub it with a paste of black garlic and roast it over juniper boughs. The fat melts and the exterior gets charred and smoky. Itโs served with hakurei turnips and a pesto made with their tops and fried peanuts. Plus a swoosh of black olive caramel and a smattering of purple shiso ๐ค๐๐
