A little bit about the star of our feasts... The Roasted Long Island Chicken. ✖️ The chickens are raised at Miloski Poultry Farm in Calverton NY. Will Miloski bought a 30 acre plot in Calverton in 1946 and began farming poultry. His son Mark, and grandson Mark have since taken over operations, but they’ve been farming the same way (and operating out of the same shop) for over 70 years. ✖️ Once procured, the chickens are brined for 24 hours. ✖️ Then they’re hung to dry. This process takes two days. The skin must be completely dry for smoke to adhere properly, and a crust to form when they roast. ✖️ Each chicken is smoked for 2 hours over cherry wood. ✖️ Before roasting, the chickens are trussed and slathered with a paste of olive oil, lemon, and spices like garlic, cumin, and chili. ✖️ Finally, the chickens are roasted. We roast on an ancient rotisserie machine left behind at The Lin. It was in total disrepair. We gave it a deep clean, ordered some new parts, and got it running again for the first time in years. It roasts the chickens very quickly with the help of high heat and ceramic tiles. ✖️ The chickens rest 😴 This allows their juices to redistribute so the meat is extra moist. ✖️ Each chicken is carved to order throughout the night. An order includes a half chicken - breast, thigh, leg, and wing. ✖️ The chickens are finished with marigold flowers grown at Koppert Cress in Cutchogue. These marigolds have been grown specifically for eating. They taste a little citrusy and a little spicy - like summer. ✖️ And finally, each chicken gets a charred lime. Charring the lime removes some of the bitterness, and gives the juices a sweeter, smoky flavor. ✖️ It’s far from being ‘just a roasted chicken’ and we’re really proud of it. .
