One of my favorite dish to cook, Enchiladas😋
-Basmati pilaf rice with mix of green peas, carrots and corn
-Chicken enchiladas with chicken, mexican mix of shredded cheeses and tomatillo avocado salsa.
Pure comfort food , simple and delicious .

Beautiful and tasty green salad fresh from my hydroponic garden:
Mustard green, Tokyo bekana mustard, perpetual spinach,butter crunch,bulla blood, Swiss chard , red mustard , green mustard flowers mixed with a fresh honey mustard parsley vinaigrette

For breakfast or brunch or at any time of the day!

Entomatadas filled with pan fry chicken , blanched green beans and a scoop of guacamole . So delicious comfort food.
Usually, Entomatadas are tortillas covered with tomato salsa and served with queso fresco and crema . I did a little of a variation filling the tortillas with a well seasoned pan fry chicken tights and diced them after.
Entomatadas is a very popular Mexican dish.

The taste of these green leaves from my hydroponic garden are amazing!
Green salad ( red mustard green, butter lettuce , kale , cucumber and avocado), sautéed shrimps on white butter garlic sauce and a fresh olive oil, lemon pepper dressing. Delicious!

Lemon Roasted chicken , roasted roots, Chinese stir fry greens and mushrooms.

I’ve been baking a few different recipes of almond bread and this one is so far the best of all . Very moist and fluffy.
I added Rosemary-Parmesan cheese and it is delicious!
