What to do with your risotto leftovers.........

I like to make risotto on Friday nights because then I can put the leftovers on a small sheet tray in a thin layer and refrigerate over night.

Then on Saturday morning, I have a delicious cheesy base for a poached egg, parmesan Reggiano, and aged Aceto Balmsamico di Modena.

Citrus marinated shrimp with saffron risotto anyone?

Risotto is a hearty, creamy, and savory dish.

Introducing some acid from the orange and lemon zest marinated shrimp evens out this dish perfectly.

Pistachios are NOT nuts, they are a fruit.

So drinking a beer, and eating pistachios, while watching football is essentially the same as eating an apple, with wheat toast, and engaging in athletics.

Sounds like a good workout routine to me.

It's easy to skip breakfast in today's fast paced world.

But why would you want to skip a meal that is so delicious?!?!?!?!?

It is the most important meal of the day after all.

There is no better pasta on a cold winter day that speaks to me quite as much as bucatini carbonara.

Fresh bucatini, crispy guanciale, silky smooth egg yolk, and plenty of Pecorino Romano, with a bite of black pepper.

What could be better?

During cold, snowy, winter days, I like to remind myself that grilling season is just around the corner!
