Such a delicious way to repurpose so many wild foraged greens from last weekend's Great Lakes Foragers Gathering. Boiled russets mashed with cast iron cooked purslane and sochan seasoned only with salt, pepper and vegan Parmesan. Wrapped in a simple flatbread dough of flour, salt, olive oil and water. Brushed in butter and fried crispy. These were amazing. Thinking of all the possibilities with this simple flatbread recipe.
Just a perfect vegetarian breakfast sandwich with everything bagel, free range eggs, spicy sausage, Earth Grown Vegan Cheddar, plant based cream cheese, Romain and Dijon mustard. 🤤
Vegan shrimp po boy. They are on the right track with the flavors but it took a couple bites before I even reached the vegan shrimp. I appreciate the take on something new and their vegan cauliflower bites with buffalo still win the prize. They were gone before I could even get a photo. 😋
This perfectly cast iron cooked zucchini made for the most delicious Mediterranean inspired wrap with garlic sauce, baba ganoush and pea sprouts.

A delicious simple way to make a quick frittata.
Large tortilla in a pie tin. 4 eggs and ingredients of choice topped with cheese and baked at 375 for 15 min. Here I used spinach, mushroom, onion, avocado and chive topped with plant based mozzarella. 😋
This simple flatbread offered some big flavor. Spinach, red onion, mushrooms and roasted garlic.

These banana scones were the start to a delicious new tradition. Banana scones all the time. 🙌🏽
This is simple deliciousness. This baked bread/bar/cake/pie thing. It's slightly reminiscent of baked French toast. So easy. Not too sweet. Sweeten it to your liking by drizzling more maple syrup over a baked slice.
One can of pumpkin. One ripe banana. Two cups of oats. ¼ cup nut butter. Blend all together. Top with maple syrup and nuts. Pour in a parchment line bread pan and bake 350 for 40 minutes.
Fancy charcuterie is one thing and sometimes a simple snack tray is all that is necessary. This is dinner tonight.
These gorgeous roasted root veggies make for the most delicious colorful side at brunch.
Found a delicious simple way to enjoy crispy tofu. No cubes and 2 or 3 step breading or baking process. Slices of firm tofu with moisture gently pressed out. Dip in cornstarch water then panko bread crumbs. Fry 3-4 minutes on each side and sprinkle with a little flake salt. Crunchy and flavorful. Would make a great fish sandwich. Here I paired it with some leftover veggie fried rice and sauteed zucchini drizzled with Sriracha. 😋

A simple yellow cake with white frosting and sprinkles on a Saturday night. Just seems right.
Found the best simple tasty recipe for tofurky. These few ingredients made this entire log sliced into what would have been at least 5-6 packages if purchased in store. I am so excited and so impressed with the results. I will put the Instagram video tutorial I followed in the comments.
A little fun with an air fryer this snowed in Sunday.
Maitake and portobello carbonara inspired deliciousness. I roasted the mushrooms. Cast iron cooked diced seitan. Made a delicious creamy sauce: full head of roasted garlic, 1/4 cup nutritional yeast, half a block of extra firm tofu, Maitake liquid, garlic oil, s&p. Mixed everything together. 🤤 Soooooo good... Decadent rich creaminess.
My mouth is still watering thinking of all the delicious options at Paw Paw Pizza Company in Warner Vineyards. A full delicious Vegan menu and a full delicious non vegan menu. Appetizers, sandwiches, pizza, pasta and salad. Here's just a couple of our tastings. Baked vegan artichoke dip and Black n Blue Beyond Chicken Sandwich. Not pictured was one of the most delicious burgers my love ordered. Already looking forward to the next time.
