For this week, we have two Wednesday special glass pours and they are by the passionate Emilie Mutombo.

She developed her interest in natural wine in her birthplace of Brussels, she worked events and attended natural wine fairs. This work eventually led her to pursue a degree in oenology.

After graduation, she went to study in the south of France with Domaine du Chêne Bleu. In 2017, her entire direction changed at Les Anonymes wine salon, when she met Massimo Marchiori of the famed Catalan winery, Partida Creus. Moved by Massimo’s low intervention approach to winemaking and careful work in the vineyards, they began working together. Through that work with Massimo, Emilie began to develop her own style.

In 2020, she found a house and cellar and released her own work from Bonastre, about an hour’s drive southwest of Barcelona.

We couldn’t be more excited to pour these expressive wines for you today and honor the hard work of Emilie. $15/glass until it’s gone!

This week’s Wednesday special glass pour is an electric, almost vibrating white Burgundy from Domaine Rougeot - a chardonnay that shows the brilliant balance between texture and acidity found in his wines.

Pierre-Henri took over the domain in 2010, and over the last 10-15 years he has converted the estate into entirely organic practices and will finish with biodynamic conversion by 2024.

‘La Monatine’ comes from a single vineyard that has 55 year old vines and clay-limestone soils, Pierre believes that this site in particular is very Meursault in style. He uses a pneumatic press to crush the grapes and the wine then spends eleven months in neutral 228L barrels. The bottles with diagonal labels indicate his wines that have no additions.

The beauty of Pierre-Henri’s wines and of the other young, talented vignerons in Burgundy, is their incredible prowess in current and historical ways of viticulture and winemaking and most of all…knowing when to use them. $18/glass until it’s gone!

We’re in love with the new strawberry pavlova - a crispy meringue filled with macerated strawberries from , topped with a silky creamsicle curd, toasted almonds and the prettiest thyme flowers. For when ya feelin spritzy! The Bungling Ladybug is a sbagliato variation featuring .spirits Crimson Amaro, Cerasa vermouth and cava. It’s a nice low ABV patio spritzer that’s also in the Negroni family.

Herbaceous, slightly bitter, slightly sweet and perfectly refreshing. See you for apéro hour at 4!

This week’s Wednesday special glass pour is a winemaking project between winemaker Nathan Kendall and sommelier Pascaline Lepeltier, called chëpìka. The word chëpìka, means “root” and comes from Lenape, a language spoken by the Native American tribe of Delaware. Both chose the name as a tribute to Northeastern history and to the presence of Native Americans in the region.

This zippy, low abv Pét-Nat is made from the Catawba grape, which before the 1860s was the most widely planted grape in America! Its exact origins are still unknown but we do know that its parentage includes some of the native american varieties like vitis labrusca.

With establishing chëpìka, Nathan and Pascaline not only wanted to make wine together but also use the project as a way to raise indigenous awareness and to give back to communities through donations, like OJI:SDA - Sustainable Indigenous Futures. They hope that “chëpìka and its symbolic meaning in the Lenape language can build bridges and allow for respectful & critical questioning in order to build a better tomorrow.”

Philippe Valette took over his father’s estate in 1992. His father was the first in the region to stop selling grapes to the co-op and bottle his own wine. After the estate was passed down, he took time to carefully convert his vineyards to organics and trained the vines to be farmed without the use of chemicals. He is renowned and respected all over France for the care, focus and knowledge he has for his soils and vines.

Philippe likes to wait for as long as he can to pick the grapes in order to develop maturity on the vines. Thus he crafts wines of extraordinary decadence and complexity. This specific bottling comes from the area of Chaintré, where soils are a mix of clay and silt. He ages the Chaintré for 25 months in older barrels. During this evolutionary time, the wine hangs with the lees and develops savory, delicate almost mushroom-like aromas in the final wines. This wine is a thoughtful Mâconnais wine, with a stoney vibrating center that indefatigably pulls its heady texture and weight back into its own orbit.

Just a mere 25 minute drive from the Gulf of Trieste, in the southwestern part of Slovenia, is the fifth-generation family run farm winery of Štoka. It’s where Primož Štoka bottled his very first wine in 1989, just about a year before the separation from Yugoslavia.

Now, with his son Tadej they work vineyards, farm and cellar together. The farm covers about 30 ha, with 7 ha dedicated to vineyards. Sitting about 250 meters above the Adriatic, these vineyards can be a bit cooler than their Italian coastal counterparts.

Teran is a historic grape of the region and makes deep, brooding and berried styles of wine with a savory lift. It’s nice to drink with the local homemade prosciutto there called Pršut.

To make this ‘Penece’ or ‘Pet-Nat’, the Štoka family takes a new approach to Teran and lets it finish fermenting in bottle, trapping the bubbles and creating a zippy and juicy style of this luscious, gothy grape. It tastes like lambrusco’s more northerly cousin.

It’s been six months since we opened the doors at Eliza and we feel so lucky to be a part of the fabric of midtown Kingston. What a dream team we have! 💕

If you’ve been coming to see us, thank you for supporting our little neighborhood restaurant. We appreciate you! If you haven’t been in yet, it’s not too late. We’re just hitting our stride and it’s only getting better from here.

In 2009, Ludovic Chanson purchased 6.5ha of vineyards after working with some of the best farmers and vignerons in the Loire Valley. ‘Rigodon’ is a newer cuvée that is made up of four different parcels, fruit that previously went into his Pet-Nat ‘Les Pions.’

This wine is pneumatically pressed and then aged in tank for seven months. In the vineyard, he works organically and each grape bunch is carefully separated by vine age and ripeness. Oftentimes during harvest, there will be several different passes through the vineyards in order to catch the grapes at their ideal ripeness.

The special thing about Ludovic is that he takes his time in the cellar to taste and develop an understanding of each individual pressing before blending. Needless to say, Ludovic is a legendary farmer and vigneron who cares deeply about Montlouis Chenin Blanc! $15/glass until it’s gone.

For almost a hundred years, the historic Clos Cibonne estate has been championing an unheard of red grape called Tibouren. Tibouren is an ancient variety that makes delicate rosés and reds of substance and grows well only when it has close proximity to ocean breezes.

Andre Roux, the head of the Clos Cibonne estate in the 1930’s, had the vision to champion this rare grape long before Provencal rosé became well-known in America. He even single handedly helped to shape the future of rosé by insisting that it be a grape included, by law, in the wines of the Côtes du Provence!

Olivier Deforges is the current fifth-generation winemaker to tend the vineyards and work in the cellar and helped the estate to gain organic certification in 2019. Their Cuveé Tradition rosé is aged for a year in prized 120 year old 5,000L oak barrels that are original to the domaine. During the aging process and only when conditions are just right, does the wine develop a ‘fleurette’ or a thin, lacy veil of yeasts that forms over top of the wine. The ‘fleurette’, in combination with the characterful Tibouren grape gives this rosé its nuanced and elusive qualities that have become so sought after by wine Francophiles.

Géraud and Pauline Fromont perform equal duties for their beloved Domaine des Marnes Blanche. Both grew up in Jura, with winemaking and farming in their blood. They both attended oenology school in Dijon and then took over a 5 hectare estate in 2006, when they were both only in their mid-twenties! Since then, the couple has become one of the great rising stars of the Jura. They organically farm their small parcels in a southern area known as the Sud Revermont. The ‘Les Molates’ bottling is 100% Chardonnay planted on a marl based soil. The wine spends about a year in large barrels called foudres. The Fromonts are a part of a very talented group of vignerons in southern Jura. We’re excited to taste this one with you!

The dynamic flavors of Alto Adige are encompassed in this skin contact Pinot Grigio, a grape that has a pink-ish hue to its skins.
