Yesterday, we had the opportunity to bring a couple of kilos of love (coffee) to Holding Institute Community Center. ☕️ This place is dedicated to supporting many migrants passing through Laredo who face countless hardships.

This visit reminded us how blessed we are with the opportunities we have and reaffirmed one of our core goals at The Hermit: supporting positive social change through coffee.

We will continue to work hard so that these types of support and interactions grow exponentially.

We took a roasting course with Desarrolladores de Cafe in Colombia! Despite missing the last day due to a mild cold, we gained some incredible insights during the course.

The first three days were filled with an abundance of theory, delivered by Nikolai who not only understands the subject deeply but is also extremely passionate about the craft. It became clear that understanding the ins and outs of the coffees being roasted, and planning in advance the type of curve that best highlights the coffee’s potential and matches the roaster’s goal, is crucial.

Roasting coffee goes way beyond simply choosing a light, medium, or dark roast. It involves understanding the green coffee, the type of process it went through, and how delicate the coffee might have become post processing to better plan the roast curve. This level of detail reinforced that we were at the right spot!

At The Hermit, our goal in roasting coffee is to have a direct impact on all the different aspects of the supply chain of specialty coffee - especially the producers, who often have the greatest risk exposure and not necessarily the best return. This class reaffirmed the need for us (roasters) to get closer to production and understand the origins of the coffees we work with.

We are motivated to continue this path of learning, get closer to the producers, and continue to support this industry we have fall in love with.

Decaf alert! ☕️

We understand decaffeinated coffee can be disappointing, but we’re working hard to change that. In order to do that, we need to make sure our sourcing and roasting of these decaffed beans are of the finest quality for a great final cup.

We believe decaf drinkers are true purists, drinking coffee purely for its taste and not just for the caffeine perks.

It's always a great experience to share something you're passionate about with people who are open to trying something new and learning with you.

It's not necessarily about choosing The Hermit Coffee over any other specialty coffee, or even choosing commercial coffee over specialty coffee.

It's simply about making a more informed decision about something we consume daily, often 3-4 times a day.

Once we learned a bit more about the shortcomings of commercial coffee and the vast array of delicious coffees out there, we were sold on embarking on this specialty coffee journey.

Introducing Luna Azul, named for its robust blend of blueberry and dark chocolate flavors. 🫐🍫

Crafted by Álvaro Andrés Cardona Molina, a dedicated member of the Young Producer Program, this coffee undergoes a black honey process resulting in a sweeter cup. 🍯

After a week of fermentation in cherry in open tanks, the beans are depulped without water to preserve the mucilage, then carefully dried on raised beds. ☕️

Andres's passion and innovation shine through in every sip, making Luna Azul an unforgettable journey to the moon.

We’re Back in Business! 🤝 Two weeks full of blessings (sales) brought up a series of challenges faster than expected.

Thanks to the collaboration of several people within the supply chain, from the importers doing everything possible to get coffee here several weeks before scheduled, to the freight company willing to deliver on a holiday, and the people at the office at willing to carry around kilos of love (coffee), we were able to keep customers happy and the operations stocked up with delicious specialty coffee.

Meet Carolina Ramirez, the woman behind our current edition of “Mujeres Cafeteras” coffee. ☕️ Her journey from practicing law to becoming a passionate coffee farmer in Colombia is nothing short of inspiring. Here’s a glimpse into her story:

Carolina’s journey began in the world of law, where she found herself drawn to something beyond the courtroom — a curiosity for the art of coffee. An art form already practiced by her mother, a coffee producer herself. It was in the midst of this curiosity that Carolina’s path took a profound turn. During the pandemic, she found herself fully immersed in her new passion. What began as a hobby quickly evolved into a calling; as she delved into the intricate world of coffee farming.

In an industry historically dominated by men, she faced lots of challenges. From societal expectations to unequal pay and resistance in leadership roles, Carolina navigated through obstacles with resilience. Her journey serves as a testament to the strength and determination of women in the coffee farming community.

Along her journey, Carolina found support and guidance in the power of mentorship. Through mentorship programs, she connected with experienced farmers who passed on invaluable wisdom and insight. Their mentorship not only fueled her personal growth but also ignited a passion within her to pay it forward and support the next generation of coffee .

Life's challenges don't define us; our resilience does. Last year, obstacles kept me from breaking the 2-hour mark in the Houston half marathon. COVID tried to slow me down, but I pushed through. This year, a pre-race cold tried to slow me down again. Fueled by The Hermit Specialty Coffee, I crossed the finish line at 1:42.

After working for over 13 years as an engineer in the energy industry, I felt that something was missing in my life. Then, I decided to embrace my inner Hermit and leave my “secure” career in search of new adventures and understanding. As a coffee aficionado from a young age, with a burning desire to have a more direct and positive impact on the environment and those around me, I conceptualized .

I started my coffee adventure with a small batch roaster and 5 kilograms of green coffee that I brought back from after visiting my parents. As I experimented with roasting, The Hermit Café started to take shape. Now, we use a 3-kilogram commercial-grade coffee roasting machine that we run out of downtown , TX.

Our goal is to offer the highest quality to all and provide a sustainable . We want to enrich the lives of all those involved in the supply chain, especially the and who make it all happen in the first place. We hope our efforts will positively impact the and the we work with.
