Ingredients
1 Large Quick Chick of Kickin’ Kay Lynne
3 cups coleslaw mix
3 green onions, thinly sliced
Egg roll wrappers, thawed
1 egg, beaten
Canola oil for frying

For the Dressing
½ cup ranch dressing
3 tbsp blue cheese crumbles
2 tbsp fresh dill, chopped

Steps
1. Combine coleslaw mix, Kickin’ Kay Lynne, and green onions in a medium-sized bowl.
2. Place an egg roll wrapper on a clean surface in a diamond shape. Add 2-3 tablespoons of the Kickin’ Kay Lynne mixture onto bottom third of the wrapper. Lift the point of the wrapper over the filling. Brush the remaining edges with the egg. Fold the left and right corners in toward the center and continue to roll into a tight cylinder.
3. Set aside and repeat with remaining wrappers and filling.
4. In a large skillet over medium heat, heat ½ inch oil until it reaches 350º. Working in batches, add the egg rolls and fry until golden brown. Transfer to a paper towel-lined plate to cool.
5. In a small bowl, combine ranch dressing, blue cheese, and fresh dill.

Preheat oven to 350º. Spray a 9-inch baking dish with cooking spray, set aside. 2.
