All the berries ripening at the farm this week!
The strawberries have done amazing this year! My blackberries I planted last year are doing awesome, too. The wild ones are blooming all over the farm!
We are thinking of doubling our strawberry crop and offering you pick. What are your thoughts?
It all started May 19, 2021 with a little dreaming. We were sitting in our house in New Market, AL and one of us said something about building a little cabin on our farm in Kentucky. The other said yeah I’ve always had a spot picked out. Next thing you know we were pulling up the same spot on the map. We thought we were dreaming about our own little hideaway when we visited family or a hunting cabin. But God! He had other plans.
Over the past year our joy has slowly faded away. My spark had almost gone out until God recently brought it all back. He reminded me how we got here, how quick that little dream turned into a reality. How we completely trusted him and took a leap of faith. I found the blog I kept during this amazing part of our life and begin reading each post. It sparked that joy and reminded me of the faith and excitement we had for what God was showing us. He reminded me He is with us and He IS NOT FINISHED! He is working on our endurance, our steadfastness, He is purifying us like fire purifies gold and preparing us for the blessing He has in store for us and our farm.
Over the next few posts I am going to recap our story. How a little dream on May 19, 2021 turned into reality on September 11, 2021. It’s time to remember our why! Time to bring that spark back and faithfully trust God with what’s next in our story.
Trusting God and following His plan for the farm! We just added 8 fruit trees to the farm! Half should be fruit bearing this year and the other half need another year.
We plan to add more this fall and next spring, too. It’s exciting to watch the farm grow and change each year. Being able to feed our family and our community is a beautiful thing!
We planted Fuji, Granny Smith and Honeycrisp Apple trees. We planted a plum tree and a plumcot which is a favorite of mine. A hybrid plum and apricot.
Good morning and Happy Tuesday! I’m excited to introduce you to Truvy and Spud! Truvy is a mini Nubian and Spud is a Nigerian Dwarf. They will be joining us this spring. Right now they are with their mama’s across the county at Red Castle Farm.
We harvested pumpkins yesterday and today all our Chapel Hill Head Start children got a pumpkin to take home!
Over the weekend I weeded, fed and mulched the blueberries, blackberries, raspberries and grapes! They are ready for fall/winter.

Taco Fiesta Soup
Here is a quick video on this yummy taco soup. Great for a cool, rainy day like today.
Apple Cranberry Oat Muffins
Makes 18
90 Calories, 15 Carbs, 2 Fat, 3 Protein & 3 Fiber
Mix together:
2 cups buttermilk
1 cup old fashion oats
2 large eggs
2.5 T of Truvia Brown Sugar Blend
1 granny smith apple chopped w/skin
1/4 cups reduced sugar dried cranberries
In another bowl swift together:
1 cup whole wheat white flour (King Arthur is my fav)
1/3 cup almond flour
1 t baking soda
2 t baking powder
1/2 t pink salt
After you swift together the dry ingredients add them to the wet and mix just enough to get everything mixed together. Do not over mix. Evenly fill 18 muffin tins and back for 24-28 minutes at 375.

Shredded Chicken Tacos with Cilantro Jalapeño Pesto and Chipotle Slaw! Yum!
Quick Tip: Buy a bag of Cole slaw mix put it in a bowl and mix it with 1/2 cup of your favorite dressing. Not only is a great taco topper, but a great side to go with your sandwich, wrap or grilled chicken.
Busy weekend with no time to meal prep? Just grab some healthy chips (Wild Roots Red Quinoa Tortilla Chips), wraps and your favorite chicken salad! I threw this together in a couple minutes right at my desk.
Sugar Free Churro Cupcakes
Peanut Butter Caramel Dip
Made this quick and easy dip for apple and banana bites today. It’s delicious!!
1 cup 0% Fat Greek Yogurt
2 Tablespoons Natural PB
1 Teaspoon Vanilla
2 scoops of Vanilla Protein
Sugar-Free Caramel Syrup- 1 serving
You can substitute PB Powder for PB and Caramel Extract for the caramel syrup.
Makes 4 1/4 cup servings. Perfect dip for an apple or slice a banana up and make little banana & dip sandwiches with some Lily’s sugar free chocolate chips.
Hawaiian Chicken Pizza
4oz Grilled Chicken Breast
2T Pizza Sauce
1-2 pieces of thin Honey Shaved Ham (1 ounce is what I used)
1/4 cup fresh pineapple
2T Shredded Mozzarella Cheese
1/4 t Italian Seasoning
Grill/bake/Airfry the chicken with Italian Seasoning until about 80-85% done. Put on cookie sheet add pizza sauce, ham, pineapple and cheese. Bake at 350 for 10 minutes. Add a cup of fresh Broccoli and make it a complete meal!
241 Calories, 8 Fat, 33 P and 11 C (this includes baked broccoli w/ spray of Olive oil).
Yogurt Bark! That’s what I made! A quick, easy and healthy dessert. So many combos you could use. Used 1.5 tablespoons of the nut butter, 1 tablespoon of chips melted with a teaspoon of milk, 1/2 cup raspberries and 1/4 cup of my sugar free candies pecans. Oh and the whole tub of Greek yogurt. This made 6 servings at 112 calories, 2.5 net carbs, 6.1 fat and 10.1 protein.

For those of you that want less fat use grilled chicken breast, 1/3 less fat cream cheese, low fat Mayo and turkey bacon. Or even try Greek yogurt in place of mayo. 😃
Chaffle White Bread BLT for lunch this week. 3 pieces of center cut bacon, Butter (aka Boston) lettuce and Roma tomato.
White bread Chaffle is 1/2 Cup shredded cheddar, 1 egg, 1T almond flour and dash of salt. That makes two 4” Waffles. 430 Calories, 68% Fat, 28% Protein and 4% Net Carbs. Add some avocado Mayo and fresh broccoli to get it closer to 70,20,5 on the macros.

Got back on track today with some meal prep. Made these Egg Cups from the new cookbook a friend got me for Christmas. Guys these are amazing and super easy—Kevin even loved them.
Credit to Runner’s Kitchen Cookbook by Emma Coburn. I adjusted it to 10 eggs scrambled, used 1/3 less fat cream cheese, Boars Head Smoked Ham and shredded cheddar.

I made these this morning and they are yummy! The pumpkin seeds give a salty taste and the maple cream cheese bring the sweet!
You could always use almond flour, AP four or whole wheat flour instead of white whole wheat I used.
