It’s Taco Tuesday so we wanted to share a quick Vegan Shredded Tofu Taco recipe 😋🌮
Ingredients 🌮🥬🥑🌶️
15 oz of firm or extra firm tofu
2 tablespoons of olive oil, divided
2 1/2 tablespoons of taco seasoning
3 tablespoons of your favorite salsa
Optional for serving: tortillas and your favorite taco toppings
Instructions 🫕
Press your tofu following these instructions to release excess moisture. I only press mine for about 5 minutes because the cooking process really helps release the moisture in this recipe as well.
Shred the tofu using the large grate of a box grater. I like to break the block in half to make it easier to hold.
Place the shreds in a large bowl and sprinkle with the taco seasoning and 1 tablespoon of olive oil. Toss so that the tofu is fully covered in the seasoning.
Add the remaining 1 tablespoon of olive oil to a large skillet over medium heat. Once hot, add in the tofu shreds and spread into an even layer in the skillet. Let cook, untouched, for about 3 minutes. Then continue to cook for 5 more minutes, tossing every few minutes. Leaving it undisturbed for a couple minutes helps the tofu get a little crispy around the edges.
Remove from the heat and ENJOY as you would other taco “meat”.

Recipe Idea: Strawberry Banana Chocolate Smoothie (The Conscious Plant Kitchen)
•Frozen Strawberries – Frozen fruits make smoothies creamier, and strawberry marries very well with chocolate.
•Ripe Banana – For natural sweetness and extra creamy texture. The ripest the fruit, the sweeter the smoothie will be.
•Unsweetened Cocoa Powder – You can use sweetened cocoa powder, but you’d have to reduce the quantity of dates to balance the sweetness.
•Unsweetened coconut milk or almond milk, or any plant-based milk you love.
•Ripe Avocado – It adds healthy fat and gives the most creamy, thick texture to the smoothie!
•Dates – For an extra boost of sweetness while adding magnesium, potassium, iron (find other vegan iron source), and vitamin B6. I used small Deglet Noor dates. Medjool dates are larger!
•Chia Seeds – For extra protein and fiber.

We’re back with another Meatless Monday recipe! Today will be for a Chickpea Burger 🍔 🌱😋
INGREDIENTS & SUBSTITUTIONS
•Chickpeas: Drain and rinse the chickpeas well before using. The brine they are in can sometimes be quite salty so rinse them under cold running water.
•Rolled oats: Rolled oats help to absorb moisture and bind the ingredients together. You can use quick oats in a pinch or more flour if you prefer.
•Flour: All purpose flour works best here, but you can use a 1:1 gluten-free flour or almond flour if you have an intolerance. You may need to adjust slightly with grain-free flours to make sure the texture is not too sticky.
•Onions & garlic: For a nice base level flavor. Red onions have a milder taste, but you can use white or yellow especially since they will get cooked.
•Parsley & oregano: For a nice herby freshness. Use fresh parsley and dried oregano but you can substitute with all fresh or all dried of any herbs you have on hand.
•Sun-dried tomatoes: Sundried tomatoes have a great zingy flavor and work so great in these chickpea burgers. Drain them of oil before adding to the patty mixture so they don’t add too much moisture. Keep the oil for frying the burgers or to use in a salad!
•Feta: This Greek cheese adds a slight creaminess and a briny flavor that combines so well with the tangy tomatoes and herbs.
HOW TO MAKE CHICKPEA BURGERS
•Add the red onion, parsley, garlic and oregano to a food processor.
Process until finely minced.
•Add the chickpeas, oats, flour, sundried tomatoes and feta cheese. Process until the mixture forms a ball.
•Form 6 medium or 4 large patties with the mixture.
•Place the patties in a hot skillet or grill pan to cook.
•Cook on both sides until golden brown.
Note: These chickpea burger patties are such a great meat-free alternative and they are so easy to make! Loaded with fresh Mediterranean flavors, they are a perfect addition to your burger night. Don’t forget a side like these crunchy sweet potato chips or roasted vegetables.

Due to unforeseen predicted inclement weather this Saturday, we’ve decided to make the decision to postpone. This was one of the toughest decisions we’ve had to make. However, we want to make sure our vendors WIN and participants/attendees get the BEST experience possible as we always have in our past events.
We will be announcing our new date within the next couple days and will get things for Greenville back in motion.
