Sesame crusted ahi tuna garnished w/chili crunch, chive, and jalapeño, ponzu cucumber salad
Its whats for dinner
Sweet fried corn, whole green beans cooked tender, crispy air fryer chicken thighs, crisp garden salad w/homemade ranch dressing;)
Sometimes it’s not about being fancy or complicated.. just good food like granny would make minus the air fryer 😆
-Season to your liking and Air fry on 400 for 30 min rotating shelves @ 15 min as not to burn (check temp 165 degrees)

‘No Bake’ Chocolate Lasagna
9x13 pan
1st layer-
1 box Devils food chocolate cake, 1 box brownies, crumble up and make a layer on bottom of pan and press down gently to form a layer. (I used 1/2 cake pan & 1/2 pan of brownies for this size)
Drizzle chocolate syrup on top of cake/brownie layer
2nd layer-
Mix 8 ounces cream cheese, 8 ounces Cool Whip and one cup powdered sugar together.
Spread the mixture evenly over first layer.
Place back in the refrigerator to chill.
3RD LAYER-
Mix two packages instant chocolate pudding
together with three cups of milk. Add that on top of the cool whip mixture and smooth out in a layer.
4th layer
Finally, spread 8 ounces of Cool Whip over the third layer.
Sprinkle with crumbled dark chocolate Oreos & top with chocolate curls or your favorite chocolate candy chopped into small pieces, if you like.
Refrigerate until ready to serve;)

Bake chicken thighs, spaghetti, garlic bread, roasted broccoli
Lately..
Chicken Noodle Soup is perfect on this rainy day;)
Boil whole chicken(insides removed) w/
-1 onion quartered
-3 carrots
-3 large stalks celery
- 4 large cloves garlic (smashed)
- heaping tbsp of better than bouillon
- tbsp salt
Cover chicken with water and then some. After chicken is cooked (app. 45 min), let cool and sit over night preferably
Remove fat if any from top, remove chicken and vegetables, blend some broth with all vegetables in blender until very smooth. While this is happening strain the broth and add back to pot. Stir your veggie ‘potion’ back into the broth. (This gives extra nutrients, color to soup)
Dice 3 large carrots (as you like)
Thinly slice 4 stalks celery (as you like)
Cook until veggies are just under tender. Taste and season accordingly. Add noodles depending on volume of broth (used 10 oz mafalda pasta) and cook 2 minutes under the cooktime. Turn soup off and add your chopped chicken(used 3/4 of chicken) to the pot and stir. Enjoy!
Topping options: fresh herbs, squeeze of lemon, croutons, Parmesan

Skillet Sketti
Brown butter, Whiskey, oat, Chocolate chunk cookies
Ingredients
2 & 3/4 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground cinnamon
1/8 tsp allspice
1 cup salted butter, browned
3/4 cup dark brown sugar, packed
3/4 cup granulated sugar
2 Tbsp molasses
1 tsp vanilla extract
3 Tbsp whiskey
2 large eggs, at room temperature
3/4 cup semi-sweet chocolate chunks
1/2 cup milk chocolate chips
1 cup dark chocolate, roughly chopped into chunks
1 teaspoon flaky salt- optional, but highly suggested
Instructions
In a large bowl combine all-purpose flour, salt, baking powder, baking soda, cinnamon, allspice, and oats; whisk well to combine then set aside.
In a saucepan over medium heat, melt the butter. Continue to cook the butter. swirling the pan occasionally. Keep a close eye here. The top of the butter should become foamy. And you should hear tiny popping noises. The butter will develop into a rich amber color, with tiny brown bits at the bottom. And it will have a slightly nutty aroma. Once the butter reaches this stage, remove from heat immediately and pour into a large mixing bowl.
Add both sugars and molasses into the mixing bowl and whisk well to combine.
Add in vanilla and whiskey. Beat in eggs, one at a time, beating until eggs are just combined.
Using a spatula, fold in the dry ingredients, stirring until just combined. Fold in the chocolate chips and chopped chocolate.
Cover bowl and refrigerate for 3 hours.
To bake: Preheat the oven to 375 degrees. Line baking sheet with parchment paper. Scoop the dough about 3 Tbsp drop and space accordingly. Bake 12 min
