Today was a full morning of learning !!! Making divinity candies ! My nephew loves coming in on the weekends and learning new things Start with reading a recipe… “ what does the C stand for ?” How do we separate the yolk from the whites ? What is a stiff peak ? Why don’t we stir the syrup once the sugar dissolves ? What is a candy thermometer? Why do we have to bring it to 260 ? What is the difference between a soft crack and a hard crack ? Aren’t we suppose to cook raw eggs ? ( and yes he found out the eggs whites get cooked !) how do we know and check when the candy is ready to drop ? Can we eat some now ?
