Until 2013 cachaça was commonly called Brazilian rum, but cachaça is very distinct from rum.

Rum is made from molasses, a byproduct of sugar cane production while cachaça is made from fresh pressed sugar cane juice.

This difference means cachaça has a floral, fruitier flavor and is more likely to takes on tastes of its terroir.

For example, Cachaças distilled close to the ocean may have a salty sweetness to them while cachaças produced in the rainforest take on earthy tropical notes.

? Just like bourbon, tequila and rum, cachaça be aged in many different ways, including in stainless steel casks or barrels of over 30 different types of wood!

Aging in Brazilian woods used to be more common, but many types of trees are now protected from deforestation 🌳🌳🌳🌳🌳🌳

Some distilleries can harvest trees naturally fallen, or repurpose wood already used in other construction.

Cachaça production took a hit in 2020 with the onset of the pandemic, but even at reduced capacity, more than 800 million liters are produced annually. Back in 2003, 1.3 billion liters were produced, but only 1% was exported.
