Each and every day we wake up and dial in our delicious @rubyroasters Creamery espresso, with precision to the tenth of a gram. We have had to make some changes this year in order to survive, but our commitment to excellence is not one of them. A more recent and important decision for us has been our pivot away from credit cards to exclusively cash and Venmo (digital cash) as accepted forms of payment. Because so much of our business is now online, our overall credit card processing fees have increased by almost 100%. Due to the current landscape, we are simply unable to absorb this heavy increase, so to offset these costs and be able to continue to stay in business, for those dining-in we are only accepting payment methods that do not charge us a processing fee. We do understand that this is unconventional and that not many restaurants do this, but it is a big help to us and our ability to continue to serve you and support our staff. Thank you to our community for understanding and continuing to help small independent restaurants stay in business!

There’s a lot to be upset about in the world, and yet, much to be grateful for. Wine is good for both grieving and celebration. We offer delivery, now using couriers powered by Postmates (through our website, not their platform). Although the delivery range is set by them, we actually pay for 35% of your delivery charge, which is based purely on distance, not on order total, so that getting our goods to your home can be more accessible! More cool updates: we just placed an order for some very extra large umbrellas that are due to arrive next week. We are looking forward to creating a cooler outdoor space for you and for our servers—honestly, hats off to them for working in the heat, gracefully dealing with mask-refusers, and still smiling through all of it. We are delighted to announce that, so far, all of the Covid test results for our team have come back negative. There are two teammates who tested later than everyone else, who we are still awaiting results from, but we now have enough staff with negative results to open again, TOMORROW! On one hand, we are proud that the scrupulous measures we have implemented in these past months have kept our team healthy and well. However, we hadn’t until now implemented ongoing testing, and instead thought that only testing if someone was symptomatic would be enough. Last week was a close call, and our team has now unanimously decided to implement testing every 10 days, until local cases decrease considerably. We also took this time to reflect on our operations and will be reducing the amount of available seating, to further reduce our crowding and exposure. Reservations will now be required for all dine-in guests; this way, if there ever is someone who tests positive, we can personally notify everyone who has dined with us on days that person worked. We believe these measures will continue to keep our team and community as healthy and safe as possible. Miami, thank you for all your love and support in these months. Reservations are open (and filling up) for our dinner pop up with @kriswessel of @wesselstropicalbarbq. On Friday, July 24, join us for a Florida tropical BBQ, outside under our breezy arcade. The dinner will be a five course tasting menu, for $65 per person. There is an optional natural wine pairing for $35, or an optional tropical non-alcoholic beverage pairing for $25. We have a very limited number of seats available, with respect to social distancing and community safety. ⠀⠀⠀⠀ ~ ⠀⠀ 25% of profit from the tasting menu will be donated to @growrootsmiami a local ngo that builds free productive food gardens for families in need.

So, what the heck is a #naturalwine, anyway? Natural wines are wines made with organic and biodynamic principles. They are hand-picked and produced without added sugars, without adjustments for acidity, without additives or flavorings and minimally filtered, with minimal to no sulfites. For us, it just makes sense to carry natural wines. We try to source as sustainably as possible in our food, for all of our ingredients, of course for our very special coffees. So why would wine be any different? This is the most direct interpretation of wine, this is wine in its purest form. This is the grape talking, not the processing or adjustments. These wines have character, they have personalities. Take this 2016 voigner from @puritywine, from Richmond, California. The grape’s story is directly on the bottle: “It’s made from 18 year old vines, using organic principles, and no synthetic chemicals. The fruit was picked on September 2. It rested for 3 days and was tread by foot [#oldschoolbestschool], then macerated for 12 hours. It was pressed on September 7th and the juice was sent to 3, 5 gallon tanks to ferment. The tanks were left outside during the cool evenings, where temps averaged 50º. This cool ferment helped to retain the delicate fruity aromas and bright acidity..Nothing was added to this wine, with the exception of sulfites at 40ppm total.” Only 54 cases exist, and we’ve got one of them.
