After women ate more than a cup of blueberries, researchers couldn’t find hardly any anthocyanins, the fruit’s blue pigments purported to be the beneficial active ingredients, in their bloodstream or flowing through their urine. How can blueberries have so many amazing effects if their anthocyanins barely even make it into our system?

Researchers decided to radioactively tag anthocyanins and trace them throughout the body to find out. They discovered that blueberry pigments are metabolized by our liver and our microbiome (the good bacteria in our gut) into active metabolites that are then absorbed into our system.

Some of the metabolites peak in the bloodstream within an hour of consumption, but others ramp up more slowly, especially if the berries have to make it all the way down into the colon. So, if you track the metabolites even further, some spike even higher between 6 to 24 hours after consumption. (See the chart at 4:09 https://buff.ly/2k0DnvP.)

A day later, we may still be experiencing berry benefits as our gut bacteria continue to churn out goodies that get absorbed back into our system, feeding us as we feed them. Eating blueberries is like taking a natural probiotic. Win-win all around.

You can eat your blueberries raw or cooked, as researchers saw the same remarkable improvement in artery function with blueberries baked into a bun.

The fructose found naturally in fruits is packaged with fiber and antioxidants, which may help to explain why people experience positive health benefits when they eat fruits. Adding berries to a meal can help blunt an insulin spike from high glycemic foods, for instance. The fiber in fruits can help slow the release of the sugar, and fruit phytonutrients can help inhibit the transportation of sugar into our intestinal walls and bloodstream.

Similarly, the fat found in whole plant-based foods comes packaged with health-promoting nutrients, such as fiber and phytonutrients. Nuts can help lower cholesterol and oxidation, as well as improve our arterial function and blood sugar levels. Just a few small servings of nuts a week may increase our lifespan and lower our cancer risk. Removing saturated animal fat from our diet and substituting in avocados may lead to a significant drop in cholesterol and triglycerides. However, simply adding avocado without also reducing saturated animal fat intake does not appear to result in any benefits to cholesterol. Talk to your doctor about your cholesterol-lowering options.

Delayed-onset muscle soreness is the discomfort that starts the day after a particularly grueling workout. This pain is thought to be due to inflammation caused by muscle cell damage, little micro-tears in the muscle. If it’s an inflammatory reaction, then might anti-inflammatory phytonutrients help? Ramping up our diet with phytonutrients, such as anthocyanin flavonoids found in berries, may help to deal with the inflammation.

A randomized crossover study compared a blueberry smoothie or antioxidant-matched placebo smoothie 5 and 10 hours prior to exercise, and then 12 and 36 hours afterwards, to study the effects on exercise-induced muscle damage. The blueberry smoothies were about a cup and a half of frozen blueberries, a banana, and apple juice, while the placebo smoothies were made without the berries, but had dextrose and vitamin C added to match it for calories and antioxidant power. What were the results? The blueberries worked better at mopping up damaging free radicals. Without blueberries, oxidative stress went up and stayed up; with blueberries, however, it went right down and stayed down. A day later, there was significantly faster restoration of peak muscle strength, demonstrating that the ingestion of blueberries can accelerate recovery—something that may be especially relevant to athletes who compete over successive days.

Interestingly, while the absorption of these phytonutrients can help with exercise, exercise may help with the absorption of these phytonutrients. The thought is that intense physical activity may change the activity of the good bacteria in our gut, which then boosts the bioavailability of these phytonutrients.

For many chronic diseases, non-genetic factors often account for at least 80 to 90 percent of risk. Modifiable risk factors, such as diet, weight, activity, and smoking status, account for more than 70 percent of our risk of having a stroke or getting colon cancer, more than 80 percent of coronary heart disease risk, and more than 90 percent of risk for type 2 diabetes.

The same diet that prevents stroke and cancer also prevents heart disease, type 2 diabetes, and diverticulosis, and protects against emphysema, dementia, cataracts, and macular degeneration. That's the beauty of a plant-based diet. What’s more, studies have shown that plant-based eating can improve not only body weight, blood sugar levels, and our ability to control cholesterol, but also our emotional states, including depression, anxiety, fatigue, sense of well-being, and daily functioning.

Blueberries, sweet potatoes 🤤

It’s actually better to boil them to best preserve their nutritional content, but regardless of the cooking method, keep on the skin as its peel has nearly ten times the antioxidant power as the inner flesh (on a per-weight basis), giving them an antioxidant capacity approaching that of blueberries.

Sweet potatoes are among the healthiest common whole-food sources of potassium, which every cell in our body requires to function. In fact, they can be considered a superfood and are ranked as one of the healthiest foods on the entire planet. Sweet potatoes are among the healthiest and cheapest, with one of the highest nutrient-rich food scores per dollar. When picking out varieties at the supermarket, remember that a sweet potato’s nutritional content is tied directly to the intensity of its color. The more yellow or orange its flesh, the healthier it may be, and purple sweet potatoes are even healthier!

Autopsies have shown repeatedly that Alzheimer’s patients tend to have significantly more atherosclerotic plaque buildup and narrowing of the arteries within the brain. The clogging of the arteries with cholesterol-filled plaque can drastically reduce the amount of blood—and therefore oxygen—our brain receives.

In light of such findings, some experts have even suggested that Alzheimer’s be reclassified as a vascular disorder. Vascular risk factors, such as high cholesterol, can be thought of as a ticking time bomb for Alzheimer’s disease. What’s bad for the heart may be bad for the mind. A study of 300 Alzheimer’s patients found that treating vascular risk factors, such as high cholesterol and blood pressure, may even slow the progression of Alzheimer’s. It won’t stop it, though, which is why prevention is the key. And it’s never too early to start eating more healthfully. Dietary decisions you make now may directly influence your health much later in life, including the health of your brain.
