Phat Dumpling

I don’t always make dumplings for sale at restaurants, but when I do they can be eaten at …. These cuties are called “big hugs” and they are totally vegan. Filled with charred wild mushrooms, spring garlic, tofu, coconut milk, spinach, and cabbage. They will be served with house made sunflower seed butter with black walnut syrup, and a chili honey vinegar sauce. If you are feeling snacky, come get an order of big hugs 🥰 🥟💚

Dumpling, but make it deep fried ✨ This here is a tamarind chicken empanada style dumpling with braised chicken, tamarind gravy, lovage, coriander, chile, and sweet soy sauce. It’s an homage to one of my family’s most comforting weeknight meals of braised tamarind chicken over rice.

Vegan mapo tofu dumplings from last weeks pop up : tofu and preserved mustard greens in the dumplings and a citrusy Szechuan mapo sauce at the bottom. Topped with peanuts, shallots, puffed rice, and fresh cilantro

Thai tea mini cream pie from our pop up a few days ago…. Cream was steeped with black tea and tamarind powder then turned into custard with condensed milk and some warm spices.

Here’s the line up for tonight’s pop up: Oma’s pork and corn, Szechuan tofu, chicken and roasted mushroom, Japanese beef curry, and lemongrass shrimp dumplings! We will also be slinging hot dogs and fries for that summer vibe.

We are getting so close to porch season, I can almost taste it..... nothing like a fresh batch of steamed dumplings out on the porch.

Phat Dumplings will be taking a break. Think of it as a hibernation. We were gearing up to open in a physical location, but plans have changed.
As some of you know, Phat Dumpling was created by Kristen Schwab and Jeff Marquardt during the summer of the 2020 Covid pandemic. It was born out of necessity when both of us were laid off and lost all means of income. We were not able to receive any government assistance for many months. So, we decided to take our fates into our own hands and use our restaurant experience to start our own company.
We funneled our love of dumplings, our passion, and our energy into producing and selling dumplings in any means possible while navigating a Covid filled world.
The insane amount of support and demand you all showed us was well above and beyond what we could have ever imagined.
You all gave us a leg to stand on, and propelled us to nearly opening a restaurant in the middle of the pandemic. Unfortunately, plans have changed.
A short time ago, we were each offered very stable jobs out of the blue that we felt that we could not turn down. A chance for some stability in the form of solid employment is something that isn’t available to everyone right now, and we feel blessed to have a chance to take care of our family. We are both just trying to be ok for the first time since last March.
Please understand that everyone has been affected differently during these times. We know that Phat Dumpling is in our future, we just don’t know when.
We want to come to life again when the time is right. We want to become a real restaurant when we can actually realize our dreams and feed you in person, and give you all a place to have fun and celebrate and enjoy our food together.
We hope you all take care of each other, as we still have some long months ahead of us. In the mean time, we will continue to post about our dumpling adventures.

Just a little shoutout to all of the dumplings of the past, pre- phat dumpling.
Now that 2021 is here, it’s nice to look back at where it all began.

Happy New Year’s Eve! We have been so grateful to be able to start up this little dumpling company through all the trials of this past year. We want to thank everyone who has supported us through the pop ups of 2020, and we can’t wait for the adventure that 2021 is sure to bring. See ya next year!

These are our cumin beef and onion dumplings with a side of Szechuan chili crisp for dipping and drizzling. We can’t wait to make these for you again.

Hey everyone! Instead of announcing January’s pop up dates, we would like to let you all know that we will be taking a short hiatus....
We need to find a more semi-permanent home. These past few pop ups have opened our eyes to the love you all have for our dumplings! You have given us an incredible amount of love and support, so much so, that we want to expand and feel confident taking the next step. So...please hold tight while we find a home and make some changes!!!! We can’t wait until we can bring all of Milwaukee the joy of handmade dumplings.
