Fresh vegetables from the garden always make delicious dishes!! Light in carbs and fat. And tastes delicious!!
Squash and zucchini cut into slices and layered in dish
Red pepper diced and sprinkled over dish
Onion diced and sprinkled over dish
Favorite herbs poured over dish
Mix Parmesan, Asiago, Romano cheese and breadcrumbs or panko together and spread over dish
Olive oil
Bake for 35 mins on 375
Then prepare your tastebuds!

Quick, easy, and healthy meal prep! Meatloaf made with zucchini?! No way!
1lb lean turkey meat
1 egg
1 small zucchini, grated
1/2 cup finely chopped onion
1/2 cup breadcrumbs (can use panko too)
Salt
Pepper
6 tablespoons of ketchup
Mix everything into a bowl. Portion the mixture into a muffin pan. Bake at 400 degrees for about 20- 25 minutes. Or until fully cooked.

Dice up your vegetables. Mix them with your favorite seasonings and herbs. Sautée or roast. And you’re ready to serve.

Who loves pancakes? 🥞 Who loves bananas? 🍌Here’s a simple and healthy banana pancake recipe. You can even mix it up and put some berries in them instead of nuts. Try it out and give feedback. Easy to make and delicious to eat!

As I’ve mentioned before, about 75% of your plate should be vegetables. The deeper the color, the better. The more variety, the healthier. Eating a rainbow of colors every day is a surefire way to get an abundance of nutrients and beneficial phytochemicals through your diet.
Stick with mostly non-starchy veggies. These foods are high in fiber, too, so they’ll fill you up without filling you out.
Winter squashes and sweet potatoes are fine in moderation (½ cup a day). Not a ton of potatoes! French fries don’t count even though they are the number one vegetable in America. Always choose real vegetables in their most whole and natural form.
Have some bananas lying around? Here’s a tasty (and easy) option to use them before they turn bad. Great for a quick snack on the go. Or a quick breakfast.
If you want to substitute the chocolate then here are some options...
- blueberries, strawberries, cranberries, raspberries (basically any type of berry)
- chopped almonds and/or walnuts with cinnamon
- plain with cinnamon then drizzle almond butter on top
Get creative and see what you can mix up. Lots of options for anyone.
A friend shared this with me years ago. Now it’s a favorite at our house. It’s easy to prep/make, and it’s versatile. Also delicious and nutritious.
Turkey sausage, vegetables of your choice (pictured: squash, zucchini, onion, green pepper, and carrots). You can add brown rice too.
Something to think about. Nutrition, exercise, and consistency are truly the keys to fitness.
They say breakfast is the most important meal of the day. 😁
