When our coffee trees reach maturity they begin to bear fruit, known as a coffee cherry. The coffee cherries are initially green and turns to red when they ready for harvesting. At Cafetol every single cherry is hand-picked by our farmers 🙌🏼🍒

HOW DO COFFEE PLANTS FLOWER?
Coffee plants begin to produce beautiful, white flowers between April and May. For them to grow, the region needs to receive a heavy rainfall.

Blooming is a delicate process and absolutely essential to the health of the plant.
Each blooming flower is a symbol of the coffee bean that will come months later. Ideally, arabica coffee plants will receive around 1,600-1,800 millimeters of rain in a season. With optimum rainfall, each coffee tree can have up to 40,000 flowers.

Later in the month the aroma of the flowers is at its strongest and the petals begin to fall to the ground. Left behind after the flowers fall is the carpel, which will eventually mature into a coffee cherry. The self-pollinating plants nurture this cherry until it is a ripe coffee bean ready to be roasted for your morning cup of coffee, and then the flowering process begins all over again.

We patiently wait until our “chapolas” are about 20 to 40cm high to plant them in our farms. Planting often takes place during the wet season, so that the soil remains moist while the roots become firmly established.

It takes three years until the first flowering🌿. From the 4th year, onwards, fruits can develop.

Many assume COFFEE PLANTS Grow overnight.
Coffee plants take a year to grow, and then 5 years to reach its full potential to produce fruit.

The first step to grow a strong coffee plant is planting the seeds (unroasted coffee beans). In order to thrive, the coffee tree needs a humid and hot climate. It prefers average temperatures between 18 and 22 °C without significant temperature fluctuations. The seeds germinate about two and a half months after planting, but older seeds may take as long as six months.

Nutrient-rich, slightly acidic, soils are best suited for cultivation. The evergreen plants can be grown at home under suitable conditions, but rarely produce a significant amount of fruit.

What's specialty coffee?

Toledo, is characterized by producing specialty coffee, from which origin and sustainable coffee are obtain from, specialty coffee is one of the best coffees in the world.

Specialty coffee is a term used to refer to coffee that has scored over 80 points on a 100 point scale by the SCAA (Speciality Coffee Association of America).

Specialty coffees are markedly different from regular coffees in the sense that they are grown at higher elevations, at the right time of the year, in good soil and harvested with care. Every step from growing to brewing is monitored and understood to improve and maintain high quality every day.
