Chai spice cake w/ cinnamon cream cheese frosting…
(also vegan & gf)
Autumn called for this! 🍰 🍂

As someone who loves summer I’m trying to romanticise the colder days and lemme say this chai cake is an essential part of that process 😍

Chai spice cake: (2 layers)
295mls almond milk
2 tsp lemon juice
1/2 cup aquafaba
115g vegan butter
120mls sunflower oil
300g caster sugar
1 tbsp vanilla
375g spelt flour
1 tbsp corn starch
1 tbsp baking powder
1/2 tsp salt
1 tbsp cinnamon
1.5 tsp ginger
1/2 tsp nutmeg

- in a small bowl set aside the milk + lemon juice (buttermilk)
- beat the butter sugar and oil together in a large bowl.
- beat the aquafaba until fluffy, then add to the large bowl along with the vanilla.
- in a third bowl, sift the dry ingredients together.
- slowly alternate between adding the dry ingredients and the lemon/milk into the large bowl of wet ingredients until fully combined.
- pour into two lined cake tins and bake for about 35mins at 175•C.

Icing:
200g butter, room temp
115g cream cheese
250g icing sugar (you can add more I just like it not too sweet)
1 tsp cinnamon powder

Beat together until smooth. Spread between cooled cake layers. Enjoy!

abstract chocolate flourless cake

dark chocolate shards 88%
dark chocolate poured on top

recipe:

12oz of semi-sweet chocolate
( I used ¾ dark and ¼ milk chocolate to get a balanced combination)
6 whole eggs
16 tbsp unsalted butter (cubed)
1 cup granulated sugar
½ cup water

l used a double boiler method for this cake, a pot with an inch or 2 of water, bring to a boil, then down to med/low, put a heat proof bowl on top, I use a metal mixing bowl [be sure it does not touch the water in the pot]

start by pouring the sugar into a bowl and adding the water, whisk until dissolved

stir in the chocolate and continue to whisk until incorporated


then go ahead and add all the cubed butter... I will put the bowl back on the heat in order to melt the butter a bit easier, after the butter has been fully incorporated, then you can add and whisk in one egg at a time

after all is incorporated and smooth - this recipe is able to fill a 9inch spring foam pan, a 8 or 10inch spring foam pan will work as well, the baking time will just vary - line pan with parchment and bake at 350° for 45-55 minutes or until center is not jiggly & toothpick comes out clean

this recipe is my dads, I have posted it on here last year around this time… to share some words to credit my dad for this amazing recipe:

a memory I can always recall and that I hold dear to my heart, is my dad making chocolate flourless cake when I was a kid!

My dad is the person who taught me most of what I know about cooking & baking at an early age. It's a true blessing to have learned from such a talented man who never went to culinary school and has succeeded 20+ yrs as a well rounded, respected and outstanding chef and creator - Proud is an understatement, I love you dad❤️

Glædelig 1. December ❤️
Fra mig og denne her vildt lækre, svampede kanelkage 🤤

Kanelkage er en af favoritterne her i huset (eller i hvert fald hos mig) 🤩
Den er mega svampet, fuld af smag og toppet med et godt lag kaffeglasur 😋
Kagen holder sig helt frisk og fugtig i flere dage efter, og så er denne her kage virkelig utrolig nem at lave.

Formen den er bagt i måler 20x30 cm.

Du skal bruge:
Til kagen 🤎
1,5 dl olie (smagsneutralt)
4 dl kærnemælk
100 g sukker
100 g brun farin
250 g hvedemel
1 tsk vanillesukker
2,5 spsk kanel
1,5 tsk natron
1 knivspids salt

Glasur 🤎
150 g smør
350 g flormelis
1/2 dl kaffe
4 spsk kakaopulver

1. Start med kagedejen. Alle tørre ingredienser kommes i en skål. Herefter kommes alle de våde ingredienser i, og dejen piskes igennem med elpisker.

2. Kom dejen i en kageform beklædt med bagepapir. Min form målte som sagt 20x30 cm.

3. Bag nu kagen ved 180 grader varmluft i 25 minutter. Her passede bagetiden perfekt, men stik i kagen med en tandstik, så du er sikker på at den er færdig. Der må ikke hænge dej ved.

Imens at kagen bages laves glasuren.
Smelt smør i en gryde og tilsæt alle de resterende ingredienser. Pisk det godt rundt så alt flormelis opløses.

Når kagen og glasuren er kølet godt af kommes glasuren på kagen. Sæt evt kagen på køl lidt tid så glasuren sætter sig - glasuren kan godt virke meget tynd i det, men den sætter sig altså når den ikke længere er varm 😊

Kagen er fugtig og svampet i dagevis, men bliver sjældent så gammel ❤️

~ COOKIE CHOCOLAT SPECULOOS ~

Ingrédients : (20 cookies)
- 100gr de biscuits speculoos
- 140gr de farine de blé
- 1 c-à-c de levure chimique (½ sachet)
- 80gr de beurre
- 70gr de cassonade
- 1 œuf
- 100gr de pépites de chocolat

Préparation :

Au Thermomix :
Préchauffer le four à 180°C
Tapisser 2 plaques à pâtisserie de papier cuisson et réserver.

Mettre les speculoos dans le bol
Mixer 10sec / Vit10
Racler les parois du bol

Ajouter la farine, la levure chimique, le beurre, la cassonade et l'œuf
Mélanger 20sec / Vit4

Ajouter les pépites de chocolat et mélanger 10sec / Sens inverse / Vit4

Sans Thermomix : la recette est facilement réalisable soit en utiliser un fouet électrique soit en mélangeant les ingrédients à la main à l’aide d’une spatule.

Former des boules ( 1 c-à-c de pâte pour chaque cookie) et les répartir sur les plaques préparées en les espaçant, puis aplatir légèrement
�Enfourner 10-15 minutes à 180°C, jusqu'à coloration dorée des biscuits

Laisser refroidir sur une grille avant de servir ou conserver dans une boîte hermétique

Taa daa! (The recipe is down below) A not too sweet cake that’s good for cold weather, travelling, dairy free friends and using up brown bananas. Here we go…

Olive oil banana bread
Grease and line a 1lb loaf tin. Preheat the oven to 185 / 170 fan.

In a large bowl - combine 2 mashed bananas, 110g olive oil, 170g caster sugar, 2 eggs, vanilla extract and a pinch of salt. Whisk it all up.

Now add 200g plain flour, 2tsp baking powder and a generous handful of walnuts. Mix it well, pour into the prepared tin and bake for about 40 mins.

Vanilla Cake 🍰 Happy weekend... Yesterday I passed by a cake shop and saw chantilly cake 😃, then I tried to make the cake but didn't use fruit because fruit was out of stock, so I just made it plain 😅

Material A:
4 egg yolks
40g oil
60g liquid milk
70g blue key flour

Vanilla paste Material B
4 egg whites
70g sugar
1 tsp lemon juice

How to make:
1. Mix all ingredients A with a whisk until smooth.
2. Mix ingredients B until stiff (add sugar gradually).
3. Gradually add the putel mixture to the kutel mixture and stir again with a spatula until evenly mixed.
4. Put it in a 28x28cm tin lined with baking paper.
5. Bake at 180⁰ for 20 minutes until cooked (adjust the temperature and time to each oven).
6. Once cooked, cool the cake, then cut it into 3 equal parts, then spread with cream and stack. . . .

TORTA CON ALBUMI, CACHI E CACAO

E sono tornati anche i cachi, in tutta la loro bontà, dolcezza, bellezza ... per la mia felicità! 😁

Non tutti però amano questo frutto
Ma se per caso vi vengono donati e non potete proprio rifiutarli 🙅🏻‍♀️😉 questa torta è un'ottima soluzione, perché non si sentono, ma la rendono speciale
Perfetta a colazione o a merenda accompagnata da una bella tazza di latte, caffè o tè caldo 😋

Ingredienti per uno stampo da 20cm

150g albumi
150g zucchero
200g polpa di cachi frullata
65g olio di mais
25g cacao amaro
230g farina 00
I bustina di lievito per dolci
Lamelle di mandorle qb (facoltativo)

~Procedimento
In una ciotola mescolare con le fruste elettriche albumi e zucchero (non devono mo***re)
Aggiungere la polpa di cachi, olio e mescolare ancora
Infine farina, lievito e cacao setacciati
Ricoprire lo stampo con carta forno e versare il composto
Cospargere a piacere con lamelle di mandorle e infornare a 180°C per 35 minuti
Fare prova stecchino
Ognuno conosce il proprio forno
Sfornare e lasciare raffreddare completamente su una griglia

Marble Cake< vanilla & chocolate pound cakesadoxai GUYS SAVE THE RECIPE , IT'S SOO GOOD!!!
You need:
Ingredients:
½ cup butter or oil room temperature
1 cup granulated sugar
1 tsp vanilla essence
2 large eggs room temperature
2 teaspoons baking powder
¼ tsp teaspoon salt
2 cups all-purpose flour
⅓ cup cocoa powder
½ cup to ¾ cup Milk
Icing sugar to dust on top
Method:
1. Preheat oven to 180°C. Prepare a baking tin or tray. Combine flour, baking powder and salt in a separate bowl, set aside.
2. In a mixing bowl, mix together
butter and sugar till creamy.
3. Mix in eggs until combined.
4. Add in flour mixture, fold in gently until just combined.
5. Add in milk, mixing gently.
6. Divide the batter in two parts. Add cocoa powder in one of the batters . Mix till combined. Pour the vanilla batter and fold in the chocolate batter on top, swirl with a wooden spatula/spoon to create marble effect.
7. Bake for 30 to 35 minutes, until a toothpick inserted into the center comes out clean. COOL on a wire rack. Dust with powdered sugar. Enjoy.

Un petit avant goût des desserts et goûters de nöel avec cette recette de pain d’épices issue de mon livre «mes pâtisseries préférées avec Thermomix»

Pour un moule à cake droit de 20x8 cm
150 g d’eau
30 g de sucre roux
100 g de beurre
180 g de miel de fleurs(1)
3 g d’épices à pain d’épices
200 g de farine
1 sachet de levure chimique
1 pincée de bicarbonate de soude
20g de miel(2)

Préchauffer le four à 155°C.
Mettre l’eau,le sucre roux,le beurre,le miel(1) et les épices dans le bol et programmer 6 min/80°C/vitesse 2.
Ajouter la farine,la levure,le bicarbonate et mélanger 40 sec/vitesse 4.
Verser la préparation dans un moule à cake beurré et chemisé de papier cuisson et enfourner 50 minutes.
Laisser refroidir le pain d’épices dans le moule puis badigeonner le dessus de miel fondu(2) à l’aide d’un pinceau.
Le démouler lorsqu’il est froid.

🔸️35g butter (melted)
🔸️411g jar of mincemeat (vegetarian)
🔸️130ml boiling water

For the filling:
🔸️600g soft cheese
🔸️120g icing sugar
🔸️300ml double cream

For the topping:
🔸️45g mincemeat (reserved from the 411g jar)
🔸️1 tsp icing sugar
🔸️1 tbsp boiling water
🔸️2 shortbread biscuits

Choco Roll Cake Moist Recipe

🔸5 eggs
🔸a tablespoon of honey
🔸5 stevia sachets
🔸¼ cup whole wheat flour
