I’ve got a lot of love in my heart. It needs places to go. It means more to me than I can say to be on the Board for The Breaking The Chains Foundation. The is committed to the prevention of body-focused and mental well-being stigmas through artistic programs. It’s very rewarding because:
1- I do believe we are giving an ear to listen to people who deal with mental health issues.
2 - I like to believe I am also a no-judgment type of person. Sometimes people just need an ear, a hug, or a good meal good for them to let them know that someone cares and we do really care at Breaking The Chains.

The key to flaky biscuits is handling the dough as little as possible as well as using very cold solid fat (butter, shortening, or lard). That is the secret.
Now I must say this was a really nice meal I had the honor of preparing..
Wagyu beef is hands down my favorite. Great marbling throughout the flesh makes for a ton of flavors and talk about tenderness.

BATTERED FRIED CRAWFISH TAILS
WHAT YOU WILL NEED:
* 1 egg, beaten
* ¼ cup half & half
* ½ teaspoon prepared mustard
* ¾ teaspoon salt
* ¼ teaspoon black pepper
* 1/4 teaspoon garlic powder
* 1 cup flour
* ½ cup cornmeal
* ½ teaspoon baking powder
* 1 pound large, peeled crawfish tails
* oil for frying
HOW IT’S MADE:
In a bowl, beat egg; add milk, mustard, salt, pepper, and garlic powder and mix well.
In another bowl, sift flour, cornmeal, and baking powder together and mix well.
Dip crawfish tails into the egg mixture one at a time, drain a little, and dip into the flour mixture. Drop into hot oil at 375˚F and fry until golden brown, drain on paper towels.
Enough for about 4 people

DAT BANGIN’ ASPARAGUS!
Ingredients
• 2 lbs asparagus
• 2 tbs olive oil
• 2 tbs unsalted butter
• 4-5 garlic cloves, minced
• 2 ounces feta, crumbled (about ½ cup)
• 1 tsp lemon zest
• 1 tsp dried Greek oregano
• 1 tbs D.a.T. Sauce
• ½ tsp kosher salt
• Salt & pepper to taste
• 1 lemon, halved
Instructions
• Preheat the oven to 400 degrees.
• Remove woody ends from the asparagus and rinse well. Pat dry with a paper or tea towel and set aside.
• Pour olive oil into a small pan and heat over medium-low heat; you want the oil to be heated, but not too hot or the ingredients will burn. Add butter, garlic, lemon zest, oregano, and D.a.T Sauce and cook for two to three minutes, until the garlic just becomes golden. Remove from heat and set aside.
• In a large bowl, combine the asparagus, salt, pepper, and infused oil. Mix well to coat the asparagus evenly.
• Lay out the asparagus on a baking sheet in a single even layer. Top with crumbled feta cheese, put in the oven for 10-12 minutes.
• Remove from oven, squeeze fresh lemon juice over the asparagus.
• Enjoy!
