This type of prosciutto can only be made in the hills and valleys around the basin of the Panaro River. A special breed of pork is trimmed, salted, massaged, salted again, rested, and then aged. The entire process before aging can take at least 85 days, then the legs are tucked away for another 8–14 months. A lot of love goes into Prosciutto di Modena DOP.
