Along with the cooler weather, we happily welcome braising, one of our favorite methods of cooking. If you can braise, you'll be the hero of your house! Every braised dish requires mirepoix, which is often times a base of onions, carrots and celery plus whatever other aromatics your heart fancies! Your mirepoix does not need to be perfectly chopped, just fairly uniform in size. *Start your braised dish by searing your meat on all sides in a nice, hot dutch oven or other heavy pot. *Sautee your mirepoix, until caramelized. Don't burn! *Add your braising liquid (wine, broth, stock), scraping up any small bits that may be stuck to your pot. *Return the meat to your pot, and braise in a low temp oven (325° ish) until meat is fall-apart tender.

Find the spot where two other leaves are splaying out from the stalk and pick just above that. It will encourage new growth and the plant will get bushy instead of growing straight up. All. The.
