- 1/2 cup chopped walnuts (optional)
- Cream cheese frosting

1. Preheat your oven to 350°F (180°C) and grease and flour a 9x9 inch baking pan.
2. In a medium bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
3. In a large mixing bowl, cream together the butter and sugars until light and fluffy. Add the egg and vanilla extract and mix well.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
5. Fold in the grated carrots and chopped walnuts, if using.

To make pineapple cake pops, you will need the following ingredients:
- 1 box yellow cake mix
- 1 can crushed pineapple
- 1/4 cup vegetable oil
- 3 eggs
- 1 1/2 cups white chocolate chips
- Yellow food coloring
- Lollipop sticks
- Green decorating sugar or sprinkles
Instructions:
1. Preheat oven to 350°F and prepare the cake mix according to package instructions, adding the crushed pineapple (including juice), oil, and eggs. Mix well until smooth.
2. Pour the batter into a greased 9x13 inch baking pan and bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.
3. Once the cake is cooled, crumble it into a large mixing bowl. Use your hands to break up any large chunks and mix in any remaining pineapple pieces for added moisture.
4. Roll the cake mixture into small balls, about 1-2 inches in diameter. Place them on a baking sheet lined with parchment paper.
5. Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth. Stir in a few drops of yellow food coloring to achieve a bright yellow color.
6. Dip the tip of each lollipop stick into the melted chocolate and insert it halfway into each cake ball. This will help secure the stick in place.
7. Dip each cake pop into the melted chocolate, covering it completely. Allow any excess chocolate to drip off before placing the cake pop back on the baking sheet. Sprinkle some green decorating sugar or sprinkles on top to resemble a pineapple crown.
8. Let the cake pops set and harden in the refrigerator for about 30 minutes before serving.
