Our hospital's health fair was a huge success! We had over 1,000 people from the community come out and participate this past Saturday! They got free health screenings, talked to healthcare providers, and learned about a variety of health topics. The Farmer’s Market was a huge success as the buzz for fresh fruits and vegetables was abundant! Additionally, the kids’ area was an amazing success with the bouncy houses, the virtual reality station, shaved ice, the Star Books corner, and, of course, the book back giveaways. We're so grateful to everyone who came out to the health fair. It was a great way to connect with our community and help them learn more about their health. Whole Grain Quinoa Shaker Salad! We're excited to share our cooking video, which shows how to make the Whole Grain Quinoa Shaker Salad, that's a healthy and delicious meal perfect for summer. Watch the entire video on our YouTube channel. https://youtu.be/sqko8tf0BngEquipment #hospitalcookingvideo #healthyeating #wyckoff #mealprep #cooking #cookingvideo #healthyrecipes #saladrecipes Equipment 4 - 16 oz mason jars Ingredients 8 leaves fresh mint 1 cup fresh strawberries 1 stalk fresh celery stalks, thinly sliced 1 cup fresh radish, thinly sliced 12 oz grilled chicken breast (optional) 2 cups cooked quinoa 1.5 oz feta cheese, crumbled 8 cups mixed field greens Vinaigrette 1 tsp fresh shallots, minced 1 tsp fresh garlic, minced 2 tsp fresh thyme, chopped 2 tsp Dijon mustard 6 Tbsp extra virgin olive oil 2 Tbsp balsamic vinegar 1/8 tsp salt 1/8 tsp black pepper Directions Prep time=10 mins Cook Time= 15 mins Rinse uncut produce in fresh water. Slice the celery thinly on a diagonal, slice the radish and strawberries. Set aside. Slice the mint into thin strips. Make the quinoa: Bring 2 cups of water to a boil, add quinoa, stir and simmer for 10 minutes. Set aside to cool slightly. Make the vinaigrette: Combine shallots, garlic, thyme, Dijon, balsamic, salt and pepper. Slowly drizzle in olive oil and whisk to combine. Add ingredients in the following order to each 16 ounce Mason jar with lid: 2 cups Spring Mix, 1/2 cup quinoa, 1/4 cup radish slices, 1/4 cup sliced celery, 1/4 cup sliced strawberries, 1 Tablespoon feta, 2 Tablespoons dressing Cover with lid and shake well to mix the ingredients. If using chicken breast, slice thinly and add on top of the strawberries.

July is UV Awareness Month! Did you know that exposure to ultraviolet (UV) rays from the sun can cause skin cancer? That's why it's so important to practice sun safety, especially during the summer months. In July, we raise awareness that UV is the root cause of most skin cancers and encourage the public to take precautions. Here are some tips for protecting yourself from UV rays: Wear sunscreen with an SPF of 30 or higher every day, even on cloudy days. Wear sunglasses that block 99% of UVA and UVB rays. Avoid being in the sun during the middle of the day, when UV rays are strongest. Seek shade when you are outside.
