One rainy day I decided to make homemade marshmallows. They were a hit so then I made S'mores Cookies. But then, saving the best for last, I made rocky road ice cream. Not just any rocky road mind you. I call it Salted Toasted Rocky Road Ice Cream. Made with decadent 70% dark and 45% milk chocolates, toasted almonds, homemade marshmallows and Jacobsen Flaky Sea Salt.

I present to you the last (and one of my favorite) cookies of 2021‼️My daughter who ended up extending her stay through the new year due to the ❄️ made Tiny Salty Chocolatey Cookies from . My contribution was cocoa and the BIG 1-pound dark chocolate bar from my pantry. My daughter has made these cookies several times but this time they were THE BEST. Truly the highlight of NYE 😂 Well that and channeling our inner Taylor Swift to the tune of "Feeling 20-22" 😂 These cookies are amazing. Super chewy thin cookies full of chocolatey salty goodness. Put them on your list to make in the new year.
P.S. They are NOT that tiny!

I finally made my once-a-year Gingerbread Waffles using the recipe from Rachael Ray. This version has a cup of pumpkin, molasses and all the gingerbread spices. I like mine best served with whipped cream. But also, I had to try my new Runamok Maple SPARKLE syrup! Look closely to see the sparkles ✨✨ Oh, and I finally received (post Dec. 25) my Sprinkle Pop Santa’s Workshop sprinkles with the cute little gingerbread men so these guys made their debut 😂 Let the holidays continue!

ATTN PEANUT BUTTER LOVERS!! I made these scrumptious salty peanut butter sandwich cookies with a PB-honey filling awhile ago. This is the Tom Douglas recipe from his Dahlia Bakery cookbook. When director Nora Ephron was in Seattle for "Sleepless in Seattle" she tried these cookies and elevated their popularity! They are lip-smacking good! See my latest blog for a behind the scenes look.

Thanksgiving had me too busy to write or post anything! My kids were home for several days, which was the best part. But boy was my kitchen busy (and messy). Still recovering! But I did want to share a few pictures!
The apple almond galette was a ZoëBakes recipe.
The flowers are from Down to Earth in Snoqualmie.
Cranberries stole the show. In sauce from Feasting at Home. Candied in my Cranberry + Lime Seltzer from Trader Joe's and in the ice cream for the galette.
The rest of the meal (except the salad and brussels sprouts) was beige 😂 and the turkey was not worth sharing lol.
On to Cookie Baking season!
Pretty much my favorite thing about visiting a new town or city is the eating! A few weeks ago, I was lucky enough to enjoy a girls weekend with my three sisters, my daughter and niece. It was a year of several milestones. One sister turned 60. My daughter turned 30 and my niece turned 21. The rest of us are somewhere in between! Coming from five different cities in Oregon and Washington, we chose to meet in Hood River. I have only been to Hood River once before, which is hard to believe since I grew up in the Northwest. Anyhow, my favorite meal while I was there was brunch at Broder Øst, a Scandinavian spot adjacent to the historic hip Hood River Hotel. The egg dishes are served baked in cute individual-sized cast iron skillets. The must-order item is the Ebelskiver or Aebleskiver, which are round Danish buttermilk pancakes. Once I was back home I was inspired to create a similar breakfast and made baked eggs and sweet potato patties with crispy prosciutto and onions.

The angle of the sun has shifted, the kids are headed back to school and football fans are restless. All signs that summer is threatening to end. Ahh … but because my CSA membership lasts until October – I’ve still got time! Belonging to a CSA gives you the freshest in-season fruits and veggies, supports your local farmers, and you’ll probably end up ending healthier. This year I bought a CSA membership with Fall City Farms I’m kinda partial to them because my son’s first job was at this small farm. I’ve had so much fun opening up my box each time to see what surprises are waiting for me. I love that my CSA exposes me to unique produce items that I may never purchase otherwise - or that may not even be available from the grocery. My last box had ground cherries – which I’d never eaten. These little gems are housed in paper husks sort of like mini tomatillos. Inside the husks are marble-sized orangish-yellow fruits that have a sweet-tart taste described by some as a tomato mixed with pineapple or mango. I made a slightly sweet ground cherry salsa. Yummy and received A BIG stamp of approval from my son Farmer Cody.

A few days ago, I made the decadent #63 French Silk Pie Bars from Vanilla Bean Blog Sarah Kieffer's 100 Cookies book. The cover reads: classic cookies, novel treats, brownies, bars and more. My mom turned 80 last week! 🎉 We celebrated with a party in the park. Looking for a pasta salad loaded with veggies? 🥦🥕This salad sings of summertime😀 This is my sister’s recipe. I swapped (from ) for white and added red bell pepper to the carrots and broccoli in the recipe. Then I added a radish and scallions for garnish. The more colors the merrier!
