In 2023, we were on a family vacation in Hopkins, Belizé, at the Palmento Grove Cultural, historical, and Culinary Tour ..it was so therapeutic , insightful, and so fun! More people need to go and learn about the history of the African Garifuna people in Belizé.
We are making coconut milk with hot water to squeeze the shreds to get some cream out. This very light coconut milk for the hudut-fish-herb soup and hudut-vegan coconut veggie and herb soup.
We pounded green plantain, like fufu, to dip in soup and eat! It was so fresh and delicious! 🥰✨🤗✨
We also toured their organic and medicinal farm. Amazing and very therapeutic.
In 2023, we were on a family vacation in Hopkins, Belizé, at the Palmento Grove Cultural, historical, and Culinary Tour ..it was so therapeutic , insightful, and so fun! More people need to go and learn about the history of the African Garifuna people in Belizé.
We made Garifuna traditional, hudut soup, coconut-milk-fish soup and coconut-milk vegan herb soup. They were both delicious and so fresh!
We had to add hot water to the coconut shreds to make coconut milk (no cream), by squeezing the oil and cream out of shreds. Coconut milk has a lot of water inside. We also added fresh thyme, oregano, and cilantro , that was from the garden, to the coconut milk. It was sooooo delicious!
We also made pounded green plantain to eat and dip inside of the soup to eat. It was like eating Fufu from Ghana and West Africa. I felt like we were in Ghana! There are some things and food we never lost, within the African Diaspora.
We also toured their organic and medicinal farm. Amazing and very therapeutic.

The coconut tree - the tree of life - is the most healing, delicious, and sexist tree in the world, to me! What most people don’t know is that when I make kubé, I feel very joyful and sexy, because I’m working with fresh cold-pressed coconut cream that dances with me…it’s smooth, divine, creamy …and it is clean (no chemicals). The coconut tree is the tree that nourishes my soul and body literally from the coconut water, coconut fruit, coconut cream, palm leaves.
The coconut trees are absolutely gorgeous, mesmerizing, majestic, and relaxing. They help me to remember that REST is resistance against the grind of Capitalism. As social impact food entrepreneurs, we are excited to build restorative, food justice models and restorative economics, but we also have to remind ourselves to rest, slow down, and stop moving at a machine pace because we can tire and burn out. We are not machines! We are divine human beings who are often sleep deprived and we must get our sleep and rest to be our highest self and to honor our bodies. The system of Capitalism actually teaches us all that our “value in society is connected to our productivity or work,” and this is a toxic cycle we must let go of and end. We must slow down, visit places in nature that calm our nervous system, and tune out the noise! We are already whole, worthy of living, and are beautiful beings.

Tricia Hersey explains, “Resistance in our Rest Is Resistance framework means we rest no matter what the system say. We reimagine rest for ourselves. We craft spaces of physical, spiritual, and psychological rest to disrupt and push back against white supremacy, and capitalism.” This is why I went to the Super Natural Woman Retreat, in Belizé, curated by spiritual healer and health advocate to slow down in nature, and to connect and engage with my sisters in spiritual ceremony in nature so that we could be the medicine for each other again, just like our ancestors did. We also practiced other healing modalities like Chi-Gong. I will be sharing more pictures from this amazing and healing retreat.

- I love that Oakland attracts diverse ethnic groups of people from around the world, who are foodies and who also love diverse cultural & social justice experiences.
🌿 What are you most proud of since launching kubé Ice Cream?
-Since launching kubé we are most proud of the fact that we are still standing after 7-years (since 2016). We are building our team, and have hired a few employees. kubé is now offered in the Hyatt Regency Hotel in San Francisco, in the cafe and for galas. kubé is the preferred vegan ice cream in the Hyatt Regency Hotel freezer to elevate the experience of hotel guests. Many guests in hotels need and want vegan and gluten-free food options, due to their dietary needs and allergies. kubé will also be at the Waterfront Hotel Oakland, in Jack London Square, in the new year of 2023 and will be in other distinguished hotels around the Bay Area soon.

kubé nice cream – a Black owned and woman led business, is a NEW genre of non-dairy, RAW coconut ice cream made without synthetic bleaching chemicals. We produce non-dairy, RAW coconut nice cream that is made from cold-pressed, unpasteurized mature coconut cream. If you like or do NOT like the flavor of coconut, you will love our nice cream because Coconut is undetectable in most of our flavors--instead, the plant-based flavors dominate. kube nice cream an authentic non-dairy, RAW coconut nice cream that is made from cold-pressed, mature coconuts.
We are an artisan-food producer of RAW, unpasteurized coconut nice cream. We hand-crack mature coconuts and cold-press its cream and then blend with fresh, bold, and organic plant-based ingredients, to make the creamiest texture of authentic coconut nice cream. If you like or do NOT like the flavor of coconut, you will love our nice cream because Coconut is undetectable in most of our flavors--instead, the plant-based flavors dominate.
Unlike other brands of coconut ice cream on the market, we do not use Sodium Metabisuflite in our cold-pressed coconut cream. The coconut cream and coconut milk industry uses Sodium Metabisulfite (a bleaching chemical preservative), in the pasteurization process, which is a standard industry practice. The FDA does not legally require sodium metabisulfite to be listed in a product’s ingredients if there are 10 parts per million or fewer of the preservative in the product. Many people are allergic to sulfites and do not know that sodium metabisulfite is used in coconut products, including non-dairy, coconut desserts. However, there is evidence that sodium metabisulfite can cause both gastrointestinal and hormonal issues in humans and animals. Due to our food-justice values, we will never use sodium metabisulfite or other preservatives.
