What an amazing ending to today. 3 companies, 3 couples, 3 stories. There is something about that number ya know! God has sure been good to us. Thank you to The Tasty Tenderloin LLC for taking such good care of all of us tonight. It was so good, and the company was even better between y’all and Covington Mercantile & Coffee Co.! It’s been a wild day yesterday and into today. Full of prepping and smoking meats for a catering today. The last brisket will be done soon, some peach cobbler and the sausage is getting its first smoke of two. Tomorrow we will be back at it double smoking the sausage and then double smoking the “Brisket Burnt Ends” for this shindig. It’s gonna be a good day. This is some beautiful sausage by the way. No pictures yet, but I will when it finishes later. Sausage is an earned art or craft I feel. It’s like the virtue of patience mixed with the love of your craft and style of barbecue. Consistency doesn’t come day 1, or 100, or even 1,000! It comes with caring enough to lay awake at night thinking about why the casing busted, or why you can’t keep them all uniform in size and shape, or a million other things. Anyone can make a good tasting mix, but consistency of size and appearance as it pertains to the mix, and the methods; well, that just takes time and experience. We believe our sausage program is really awesome. And it is only going to get better. We have a pretty cool sausage announcement going out later today, so be watching for that as well! I have no words for this week. I’ve been at it since Tuesday with no sleep. Culminating in an amazing showing of customers, many new and many returning, this week. Our gratitude is met with speechlessness. We hold each of you next to our hearts. From the helping hands, to the encouraging words, to the smiles, and the OMG look we get with that first bite of 850 Barbecue Brisket. All of it means so much. This week was a massive success. Thank you all so much. Now to pack it all up and head for the house. Sleep is in order. Then prep and cook again tomorrow. See you all soon!

Nothing crazy, I just wanted a burger. And they nailed it! So good, and now I’m stuffed! Y’all want some amazing food, you best be checking her out!!!

There is something special that happens when you drink the ice water, and you feel it go all the way down your esophagus, and that cooling sensation goes all the way to your stomach. Now it doesn’t happen every time. Usually it’s like first thing in the morning or after you’ve been outside working in the heat. For me it’s after I have been working with the pit for a while, and I get that first gulp. Man! Feels so good! These are my thoughts after being up all night working nonstop! Have a great day yall! I knew it was only a matter of time. We are now making red onions by the 5 gallon bucket! 24lbs of onions to a bucket. We have purchased a spring loaded mandolin that cuts onions with ease and speed. We got them “Made from Scratch” Black Garlic Pickled Red Onions on deck!
We believe in quality. And quality requires passion. But not just any passion. This is like emotional passion. This is laying awake at night worrying about your craft can’t sleep kind of passion! And when I say that Chef Matthew Brown has this kind of passion, he takes it to the limit and then stretches it a little more. I’ve never met someone as crazy in love with their art as I am, until I met Chef Matthew. He is a mentor, a friend, and an amazing mind for our time. His awards speak to the viability of his product and showcase his abilities. And Black Garlic has gone on to win more food contests, and traveled the world over to become an icon in the culinary scene. It is cooked into almost every bite that you eat with us here at 850 Barbecue, and is a staple in our kitchen. If it wasn’t for Chef Matthew, Chef Sandy Veilleux, The Black Garlic Market and The Farm / Fbf of Pensacola Inc; simply put, we wouldn’t exist. I mean that with every cell in my body. Today we are thankful for them, and raise a glass to them in celebration of all that they have accomplished. If you haven’t yet, run don’t walk, and check them out. Go to the website and see all that they have to offer, or go by the store Thursday through Sunday (normal days open excluding holidays such as this week). You’ll be glad you did! First Menu Drop for the week! We will be at the Santa Rosa County Auditorium for lunch on Wednesday for the Honor Our Heroes Career Fair! This is put on by CareerSource Escarosa and Jobs For Vets State Grants! So come out, get some lunch, we will be open to the public. Come get some July 3rd Pregame barbecue for July 4th. If you are a Veteran and looking for resources that you never knew were available or that will blow your mind at how amazing they are, come out and check this event out. It’s wildly amazing what this group is doing for our community and beyond!

I can attest to this! If you’ve never been to a Scheels, which they unfortunately do not have down here, you need to find one and go there! The closest one to us is in The Colony in Texas; which is North of Dallas for you not from Texas folks! Lol! This place is awesome. And I can attest to the accuracy of his statements.

Today was pretty wild! We are so thankful for everyone that ventured out and found us at A Boat for a Cause - Legendary Marine Boat Giveaway Benefiting Local Kids & Heroes! We had so much fun with our friends from Platinum Ice, and Birria Olga’s! Thank you to the staff for being so helpful all day, and for all of the kind words about our food. It means the world. Thank you to Sheriff Chip W. Simmons for trying our barbecue and enjoying it so much. Now we need the man himself of Santa Rosa County Sheriff's Office FL, Mr. Bob Johnson to swing through and see us sometime! July 4th would be a great day for that! Menu drop for that coming tomorrow!
