The Black Doctors Covid-19 Consortium hosted a 24 hr vaccine marathon at the Liacouras Center. It ends at noon today. This was the line to get in at 1 am as I was leaving. I waited close to 3 hrs to receive the first dose of the Moderna vaccine, because I registered. Thank you Black Doctors Covid-19 Consortium for thinking outside the box. .

I bought Chef Michael Symon’s Fix it with Food cookbook to improve my diet to help manage my Lupus. I made the Eggplant Parmesan which turned out to be a hit with my mom since she can only eat soft foods. It was soft and full of flavor. A great dish to freeze and reheat for another meal.
