Such a happy crew in the kitchen today! We had a record-breaking week and knocked out the most Gingerly meals we’ve ever made, and we’re feeling stoked about it! We sure missed today though, can’t wait to have the full team back together next week! ❤️
We’re so excited to announce that we are now offering our Gingerly meals at the National University of Natural Medicine school store! Students, staff, faculty and guests, you now have a grab-and-go, ready to heat (or eat cold!) option on campus that’s fully plant-based and free from gluten, dairy, soy, refined sugar, eggs, nightshades, and vinegars, and follows an anti-inflammatory diet approach. We all know the importance of eating more anti-inflammatory foods, but with a hectic school/work schedule it isn’t always easy to prepare these at home. Fear not! Our meals will be in stock every week, patiently waiting for you to pick them up!
We like to offer options for both meat and plant eaters in our Gingerly meals, because we believe there is no “one size fits all” approach to diet. Our vegan menu options always contain a plant-based protein source, but including an additional animal-based protein to these meals is an option we always offer too! A Rustic Quinoa Bowl on this week’s menu comes with or without ground turkey, quinoa, sweet potato, arugula, Brussels sprouts, roasted onion, toasted hazelnuts, and a creamy hazelnut coriander sauce on the side. Your future self will thank you for ordering meals when your fridge is stocked with this goodness for the workweek ahead!
Spring is finally here! 🌱
We’ve been busy as bees 🐝 in the kitchen these days, getting ready for the seasonal change and all the exciting new foods that spring has to offer. We celebrated the equinox by offering a spring inspired menu with lots of fresh Portland Farmers Market ingredients like the green garlic, purple broccolini, and wild arugula that we paired with this wild-caught coho salmon filet. We also started a partnership with Newman's Fish Market at City Market NW this week and are SO excited to be sourcing our fish from this sustainable, local company that we love. Three cheers for the beginning of spring and all the growth it has to offer!
We’re eager for spring over here, if you can’t tell! Channeling all the vibrant, colorful ingredients in this dish:
Seared cod, shaved asparagus, purple sweet potato, watermelon radish, pine nuts, and a blood orange, mint, shallot quick pickle. If only we could channel some spring sunshine, too 🤔

We’re loving the contrast of vibrant and pastel spring colors in this dish that we made in the Gingerly Nutrition kitchen this week. A filet of wild-caught cod served on a carrot, orange purée, served with steamed Japanese yam, roasted radish, and sautéed bok choy, with scallions and black sesame seeds on top.
Omega-3 fatty acids are a crucial component to a healthy diet, and should be consumed often for optimal bodily function. They’re involved in making and regulating hormones within the body, facilitating the contraction and relaxation of artery walls which regulates inflammation, and they play an important role in brain function. Because of the role Omega-3s play in reducing inflammation, they may help lower the risk of many common chronic conditions like high cholesterol and blood pressure, heart disease, cardiovascular diseases, diabetes, arthritis, neurological conditions, and even many forms of cancer. The Mediterranean Diet is one that’s high in omega-3 fatty acids, and is one of the most widely studied diets in the prevention and treatment of these conditions. That’s why we draw from this diet (and lifestyle!) in our meals and treatment plans with our clients so they can live their best life.
Sure to be a fan favorite this week, we enjoyed making this golden turmeric-spiced quinoa bowl with roasted carrots and delicata, steamed kale and arugula, golden raisins, and a side of curried carrot sauce for drizzling. It’s like sunshine in a bowl. 💛🧡
