Feeding my Family, Fast and Easy

This was legit so easy and yet an elevated summer dinner. A few glugs of evoo in a deep skillet with mimced shallot and garlic. Cook a few and then add 2 cans whole peeled san Marzano tomatoes, salt to taste, and simmer on low-med low for 10-15 min. Once done, tear up about 6 basil leaves and stir in. Separately, boil a Lb of pasta of choice. Once pasta is ready, drain and add to sauce. Plate, top with 1/2 a ball of truffle burrata, and add an optional drizzle of truffle oil. If I was making for someone other than my kids, I’d have cleaned up the bowl and added a sprig of basil on top. Chef’s kiss!

This was a seriously fast dinner—and better than I was expecting! Mozz ravioli (the fancy ones in the refrigerated section), Rao’s tomato basil sauce, Caesar salad bag kit, frozen garlic bread. The only thing I did to “church it up” was whip together ricotta, garlic, basil, salt, lemon zest and juice for a little zhuzz.

This was sooooo good and easy. I used the rotisserie chicken meat from Costco. If you don’t utilize the crap out of that, you are missing out.

The girls got mini dash machines last Christmas to make their own breakfasts. Here’s a new recipe I worked up for my current dietary needs: spray with pan, sprinkle a little shredded mozz, pour in one scrambled egg, sprinkle with garlic salt and oregano, top with more shredded mozz and lower lid. Cook about 2 minor so until cheese gets brown, serve with pizza sauce. They love it and can make it themselves!

I used a box of red lobster cheddar bay biscuits to make the dumplings in this easy chicken and dumplings recipe. Oh s**t, yall! This is IT! My new always-have-on-hand, throw-together, easy peasy dinner! Can of refried beans, large can enchilada sauce, frozen taquitos, shredded cheese and sour cream.
