2020 was quite the year for everyone. It was definitely the most challenging year of my 72 years of life. After three back to back hospital stays over six weeks, I was finally diagnosed with stage 3 colon cancer. ((WARNING: GET A ROUTINE COLONOSCOPY. I ALMOST DIED, TWICE))

A few weeks after my diagnosis, I received a phone call that I also had celiac disease, which is an autoimmune disease and told I could no longer have gluten. I wasn’t very accepting of this condition, I am well known for my delicious baking and I LOVE BREAD!! It’s one of the few things I am able to do as I also have Glaucoma with very limited vision. The doctor took my drivers license away eighteen years ago and baking has always been my “keep busy hobby.”

Back to the cancer…
Stage 3 = chemo. I tolerated ten out of twelve treatments before I was hit with some pretty horrible side effects and almost died, again, on Thanksgiving. In fact, if I hadn’t been coherent enough to state my wishes, I probably wouldn’t be alive. I wasn’t able to eat and had to be put on IV nutrition. Within days, I was getting better and was able to be discharged.

A couple of days after being home, everything hit me. I had been through so much over the last nine months and depression set in. I have a hard time saying that, but it did. All the sickness, being forced to retire from a job I enjoyed (at 72 I was still working, by choice), so many doctor appointments, chemo, facing death, and giving up baking.

My husband Randy is the cook now and he has taken on the task of making sure I eat Gluten Free. In fact he eats it too just to make sure it tastes good. If he doesn’t like it he’s sure I won’t like it either. We tried box mixes for cakes, cookies, pancakes and some tasted kind of ok, but they still tended to upset my stomach.

We started looking for recipes. My kids even helped find recipes. We started trying them out and found most were pretty good and they didn’t upset my stomach. We gave baked goods to our kids and grandkids for feedback. We even gave it to our neighbors. Everyone liked them. We have decided to start selling some of these products.

Watch this site for when we are ready to launch. We will start with a few items and add to it weekly. I hope you enjoy these treats as much as we do.
