Pergamino is the milling and exporting arm of a wider company called Santa Barbara Estate, which is owned and operated by the Echavarria family. The family also runs a popular roastery and several cafés (that we always be sure to visit when we are in Colombia) throughout the capital of Antioquia, Medellin, also operating as @pergaminocafe
