Roasted bell peppers are one of my favorite healthy snacks. In this post, I’ve outlined four easy methods for roasting bell peppers with a step-by-step photo tutorial, as well as an instructional video. These methods can actually be used for any pepper, but the amount of roasting time will vary based on the size of the pepper.

Its deeply pigmented, shiny skin advertises its other qualities: flavor and texture, of course, but also nutritional content. And it’s this nutritional content—in other words, the chemical makeup—that gives bell peppers their distinctive, enticing hues.

This stuffed bell pepper recipe is great for meal planning and has a high potency of vitamin C giving more than 2 times you daily value (240 DV%). An excellent source of dietary fiber (29% DV), protein (34% DV), vitamins B3 (60% DV), B6 (60% DV), B5 (40% DV), B2 (30 % DV), A (20% DV), K (25% DV), E (20% DV), folate (30% DV) and potassium (25% DV) while providing a good source of vitamins B1 (15% DV), B12 (15% DV) and iron (10% DV). Colorful bell peppers are a wonderful ingredient for stews, salads, soups, rice, or pasta sauce, and are delicious on their own. Our recipe for sautéed bell peppers is an easy side dish for chicken, fish, pork, or beef, but also a great addition to an antipasto or a flavorful add-on to sandwiches, wraps, or even pizza. In this recipe, garlic and herbs add flavor to crispy strips of sautéed bell peppers. It's a quick preparation that accentuates their natural sweetness. A few herbs, seasonings, and good-quality olive oil make a fantastic dish in less than 20 minutes.

Requiring just three main ingredients—bell peppers, eggs and shredded cheese—these portable baked eggs are simple to assemble and perfect for meal prep. Store them in the fridge for up to 4 days to reheat on demand.

Bell peppers are sometimes grouped with less pungent chili varieties as "sweet peppers".
