"It’s an Italian dessert made with a shot of hot espresso poured over a scoop of cold vanilla ice cream. “Affagato” means “drowned” in Italian, so it’s literally ice cream drowned in espresso. Sometimes almond or coffee liqueur is added too.

To make your own affagato, you need:

• 2 heat-resistant glasses or mugs
• 2 generous scoops of non-dairy vanilla ice cream
• 2 cups strongly brewed Cordyceps Schisandra Teeccino
• Chocolate shavings or chopped nuts for garnish, optional

1. Place one scoop of ice cream in each glass.
2. Pour 1 cup of Teeccino in each glass.
3. Top with chocolate shavings or nuts, if using.
4. That’s it! Enjoy your affagato.

As many of you know, I stopped drinking coffee about a year ago because I found that it just doesn’t work well for my body and for my health. Coffee is a powerful nervous system stimulant and while some people can handle it, others (including me) cannot!

That being said, I love the taste of coffee and I was super excited to find Teeccino because they make bold, delicious teas that taste very similar to coffee, but without the caffeine or the acid. I fix mine up with oat milk and a little maple syrup and I get my coffee fix, without the jitters or the negative effect on my sleep!

When do you know if it's time to lay off the bean juice? ⚡

"A few months ago I started having bad anxiety. I would start sweating really bad in the morning, and my heart felt like it was going to beat out of my chest. Even at night I would wake up drenched in sweat, sometimes so bad that I would have to change my shirt! 🥵

When I talked to my naturopath about it, she suspected I had adrenal fatigue and suggested I cut back on my caffeine use.

Ok- first of all, I live in the coffee Mecca of the US, and anyone who’s from Seattle knows that’s just what we do here- DRINK COFFEE!
Second- how was I supposed to survive? I have 3 kids!!!

I told myself I could drink coffee twice a week, and the rest of the days I would have matcha or this dandelion tea that I discovered.

What happened? My night sweats disappeared. No more anxiety and heart palpitations either. I still have a little coffee every now and then, but either half decaf or fully decaf.

It was so scary to switch up something that was such a cornerstone in my life! But when it stopped serving me I had to.

What you'll need 🛒
🌼2 cups flour
🍯2/3 cup sugar
✨ 1.5 tsp baking powder
🧂 1 tsp salt
⭐ 1/4 tsp baking soda
☕️1 cup strongly brewed teeccino
🛢️1/2 cup neutral oil (olive or canola)
🥚 1 lightly beaten egg
🌸1 tsp vanilla extract
📅1/3 cup chopped dates
🥜1/2 cup chopped pecans or walnuts
❤️Topping - 1 tbl brown sugar and a dash of cinnamon

What to do:
🔥Preheat oven to 350F
☕️Brew teeccino and let cool to room temp and in the meantime combine dry ingredients
🥣Add oil, egg, vanilla, and teeccino brew. Mix until just combined
🥄Fold in dates and nuts
🍳Add into muffins pan (this recipe made 8 muffins). I filled my muffin tins to the top for a buffer muffin top.
✨Top each muffin with a sprinkle of the cinnamon brown sugar
⏲️Bake for about 25-28 minutes or until toothpick comes out clean.

ENJOY!
