Now you can rest easy knowing they’re getting those essential nutrients without even knowing it. 😉 Veggie-Packed Pasta Sauce with Nutritional Yeast Ingredients: 2 tablespoons Bragg Extra Virgin Olive Oil 1 medium onion, finely chopped 3 cloves garlic, minced 1 medium carrot, peeled and diced 1 medium zucchini, diced 1 red bell pepper, diced 1 cup baby spinach or kale 1 (28-ounce) can crushed tomatoes 1 (14-ounce) can tomato sauce 2 tablespoons tomato paste 1 teaspoon dried basil 1 teaspoon dried oregano 1/2 teaspoon dried thyme Salt and pepper to taste 1/4 cup Bragg Nutritional Yeast 1 tablespoon apple cider vinegar or lemon juice (optional, for a tangy flavor) Instructions: Sauté: Heat the olive oil in a large skillet or saucepan over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute. Cook the Veggies: Add the diced carrot, zucchini, and red bell pepper to the pan. Sauté for 5-7 minutes until the vegetables start to soften. Add Greens: Stir in the baby spinach or kale and cook until wilted, about 2 minutes. Combine Tomatoes: Add the crushed tomatoes, tomato sauce, and tomato paste to the pan. Stir well to combine. Season the Sauce: Add the dried basil, oregano, thyme, salt, and pepper. Bring the sauce to a simmer and cook for 20-30 minutes, stirring occasionally, to let the flavors meld together. Blend (Optional): For a smoother texture, use an immersion blender to blend the sauce until smooth, or carefully transfer it in batches to a blender. Add Nutritional Yeast: Stir in the nutritional yeast. This will give the sauce a cheesy flavor and a serving of protein.
