Cashew Nut Stir-Fry by @thrivingonplants Want to make your usual stir-fries even better? Add in some toasted cashews for an extra boost of flavor and texture. INGREDIENTS: 1/2 cup raw cashews 200g firm tofu (1/2 block), cut into bite sized pieces and pan-fried 1 small onion, sliced into wedges 1 carrot, thinly sliced 1 red capsicum, thinly sliced 1 bunch bokchoy, leaves separated Sauce: 2 tbsp light soy sauce 3 tsp brown sugar 1 clove garlic, minced Pinch of black pepper 1 tsp cornflour/cornstarch 1/4 cup water Splash of dark soy sauce, for colour (optional) To serve: Green onion Sesame seeds, toasted DIRECTIONS: ▪️ Add the cashews into a dry pan and toast for 2 minutes until golden. Set aside. ▪️ In the meantime, add all the sauce ingredients into a small bowl and mix well. ▪️Heat up your fry pan over high heat and add in the onion, carrot and capsicum. Fry for 1-2 minutes until lightly charred then add a splash of water and cook for another minute. Add in the bokchoy, an extra splash of water and cook until water has evaporated and bokchoy is almost cooked through. ▪️ Add in the tofu, cashews and the prepared sauce. Cook for 1 minute, tossing well until the sauce thickens and the ingredients are well coated. If you prefer it saucier, add in an extra 1/4 cup water! ▪️ Garnish with green onion and sesame seeds. I do not have children of my own" Even after 11 years, I just cannot delete the clip of my first pregnancy ultrasound confirming a heart beat. This pregnancy ended in miscarriage at 11 weeks. The second at 9 weeks. The third at 13 weeks. I feel honored to be given a chance to experience all aspects of the journey with our patients. So many of you have shared your hearts with me through the ups and downs so many of you have your #rainbowbabies 🌈 Miscarriage robs you of your voice and temporarily paralyzes your thinking of ever moving ahead. It is a cruel and overwhelmingly hard set of circumstances and we are compelled to frantically retrace all of our steps. I am 1 in 8. Infertility is a disease! Yes, I am married to a Fertility Physician and this is #myfertilitystory I am at peace with how life has unfolded for me and there are many factors as to why... My husband has buffed out the hard and hurtful edges for me over the years and continues to do so every day. His words then are as generous as they are today to fill my heart and he tells me all the time that it is okay. Charred aubergine and pepper salad with walnuts and pomegranate seed’s. -Served with yogurt and flatbreads- This delicious vibrant salad is easy to make and is so healthy. When you add the warm flatbread and creamy yogurt to the textures and flavors you have a wonderful meal! Recipe by @ottolenghi video @olliesfoodhive INGREDIENTS(serves 6) 4 large aubergines 3 large red peppers 50g chopped walnuts 1small packet (about 30g) of the flat leaf Parsley, roughly chopped (reserve some for garnish) 2 fat garlic cloves, crushed 6 tablespoons olive oil, plus extra to serve Juice of lemon Pinch of ground cinnamon 75ml pomegranate seeds Maldon sea salt flakes and freshly ground black pepper Flatbread, to serve DIRECTIONS: •Blister and char the aubergines and peppers, either on a barnacle, fame grill or on the fame of your gas hob(really blacken the skins until they are hardened and completely burnt. •Set aubergines aside for 20 minutes Place the peppers in a food bag, tie it closed and set aside to allow them •To sweat for about 20 minutes. Peel the skins off and roughly chop the flesh and place in a large mixing bowl. •Scoop out the flesh of the aubergines and place it in a fine-mesh sieve to drain off any of the excess juices. Discard the charred skins. Roughly chop the flesh flesh into smallish chunks and add them to the roasted peppers. Mix together gently. •Add the walnuts, parsley, garlic, olive oil, lemon juice, cinnamon and salt and pepper to the bowl, and give all the ingredients a good mix until they are evenly combined. •Serve the aubergine smoothed out flat on a large platter. •Drizzle with the pomegranate molasses, scatter over the reserved parsley and the pomegranate seeds, then add a light drizzle of olive oil. •Serve immediately with flatbread. •ENJOY😋 #healthy #salad #ttccommunity #healthyrecipe

Olive Oil Banana Bread! Gluten free, dairy free, and naturally sweetened. INGREDIENTS 🍌🍞 3 large, super ripe bananas 1/3 cup + 2 tbsp olive oil 2 eggs 1/3 cup maple syrup 1 tsp vanilla bean paste or extract 1/3 cup coconut sugar (In a separate bowl mix) 1 cup oat flour (or almond or gf all purpose) 1 cup cassava flour (oat, almond gf all purpose) 1/2 tsp salt 1/2 tsp baking powdered 1 tsp cinnamon *optional add chopped walnuts or chocolate chips DIRECTIONS: -Preheat oven to 350° -In a large brown, mash bananas, then mix in eggs, maple syrup, olive oil, sugar, and vanilla. Mix well -In another brown whisk flours, baking soda, baking powder, salt, and cinnamon -Slowly fold dry ingredients into wet mixture *optional Add 1/2 cup chopped walnuts and/or chocolate chips Stir -Line a loaf pan with parchment paper, pour in the batter, bake for 48-53 minutes or until a toothpick comes out clean. If your periods are very heavy or last too long, your health care provider may prescribe medications that will cause you to have a lighter period. If the medication does not work, your health care provider may recommend endometrial ablation. After endometrial ablation, you may have no further bleeding, but a small percentage of patients may continue to bleed and merely experience lighter menstrual periods. Who should not have endometrial ablation? Women who are pregnant, who would like to have children in the future, or have gone through menopause should not have this procedure. (But if you do not want to get pregnant, you will still need to use birth control! Endometrial ablation makes it less likely that you will get pregnant, but not impossible.) If you have an intrauterine contraceptive device, you must have it removed before endometrial ablation. INGREDIENTS: 6 tablespoon all purpose flour sifted 1/2 cup + 2 tablespoon cocoa powder 1/4 cup sugar 1/2 teaspoon salt 1/4 cup oil 1/4 cup unsweetened applesauce 1/2 cup water 1/2 teaspoon vanilla extract 1/4 cup chocolate chopped DIRECTIONS: 1. Preheat the air fryer to 350°F 2. In a mixing bowl, add the dry ingredients and mix well. Add the wet ingredients and mix until a thick brownie batter remains. Fold through the chocolate chips. 3. Grease 4 small oven-safe ramenkins in the air fryer basket. 4. Air fry the brownies for 4-5 minutes, or until the top of the brownies are mostly set. 5. Baked Challah French Toast can make a delicious Easter Morning breakfast 🐣🐰 INGREDIENTS ▪️6 tablespoons brown sugar ▪️1 teaspoon ground cinnamon ▪️1/8 teaspoon ground cardamom ▪️1 cup while milk ▪️2/3 cup part-skim or whole-milk ricotta ▪️1 1/2 teaspoon vanilla ▪️6 large eggs ▪️1/2 teaspoon kosher salt ▪️1 lemon, zested and juiced ▪️4 tablespoons unsalted butter, melted ▪️12 thick sliced (3/4-1 inch) day-old challah bread slices ▪️1 cup frozen blueberries DIRECTIONS 1️⃣ Combine the brown sugar, cinnamon, cardamom and nutmeg in a small bowl and mix to combine. Set aside. In a large bowl, add the milk, ricotta, vanilla, salt, eggs and lemon zest. Whisk to combine and set aside. Pour the melted butter in a 9-by-13-inch casserole dish. Dip each slice of bread lightly in the egg mixture and shingle the bread in the casserole dish, sprinkling a large pinch of the sugar mixture on each layer. Pour the remaining egg mixture on top of the bread and then pour the remaining sugar mixture on top. Cover with aluminum foil and refrigerate for at least 6 hours and up to overnight. 2️⃣ Preheat the oven to 375 degrees F. Bake the casserole for 30 minutes. Uncover and bake until the custard is set and the bread is golden brown, an additional 15 minutes. 3️⃣ Meanwhile, add the blueberries and lemon juice to a small saucepot. Mexican Style Sweet Potato 🍠 This recipe would be great for a weeknight meal. INGREDIENTS 4 sweet potatoes 🥬bean-veggie-mixture: 1 onion, finely diced 2 cloves garlic, finely chopped 2 cups boiled black beans 1 bunch curly kale, stems removed, leaves torn 1 tsp smoked paprika 1 tsp cumin Salt to taste Olive oil 🍅Tomato-Corn Salad: 1/2 red onion, finely chopped Juice of 1/2 lime 2 cups cherry tomatoes, halved 1 handful cilantro leaves, chopped 1 cup non-gmo corn Salt, pepper 🥑Guacamole: 2 avocados Juice of 1 lime Salt 🌱Garnish: Cilantro leaves Jalapeño peppers Hot sauce DIRECTIONS 1. Wash sweet potatoes and pinch with a fork a few times. Bake them in he oven for about 30 minutes at 190 degrees Celsius. The time might vary, it depends on the oven and the size of the sweet potato Make sure it’s fully cooked and soft on the inside. You can tell when the skin loosens and sweet juice starts coming out. In the meantime sauté onion over medium-high heat. Salt to help to release the water of the onion. Sauté until translucent. Add garlic + spices and sauté for another minute. Add beans + kale and cook until the kale has softened. For the tomato-corn salad marinate red onion in lime juice and salt. Add cherry tomatoes, corn, cilantro and season with pepper. Simple Guacamole: Add 2 avocados with lime juice and salt to a food processor and blend until very cr Place 1 sweet potato on a plate. Cut in half (don’t cut the skin completely through). If you aren’t celiac/intolerant to gluten, you can of course use regular flour in these! INGREDIENTS Pancakes 🥞 •1 egg •3/4 cup (lactose-free) Greek yogurt •1-2 tablespoons coconut sugar/brown sugar/maple syrup •1/2 teaspoon vanilla extract •1/2 cup gluten-free flour (or regular) •1 1/2 teaspoon baking powder •1/4 cup strawberries, diced Cream Cheese Filling: •2 oz (lactose-free) cream cheese •1 tablespoon (lactose-free)Greek yogurt A few drops of stevia or some powdered sugar •1/4 teaspoon vanilla extract DIRECTIONS 1. Mix the egg, sugar, yogurt and vanilla together 2. Add the dry ingredients and stir until combined 3. Fold in strawberries 4. Scoop pancakes on a non stick skillet. Add a teaspoon of the cream cheese filling into each pancake and cover the filling with more of the pancake batter. Cook for a couple of minutes on each side 5. Serve with strawberries. 6.
