The Pizzaz is a South Philly delicacy featuring American cheese, tomato, banana peppers, and oregano. It’s only weird if you’ve never had it.

Our dough begins with a starter called a poolish. It’s a 50/50 mix of water and flour, plus just a little bit of yeast. It ferments for ~12 hours until it’s nice and bubbly, then its incorporated into the rest of the ingredients to make the dough. It’s one of the tricks that helps the crust bake up light, airy, and crispy.

A lot of people don’t even know that pasta is the best pizza topping

This Friday will mark the triumphant return of She’s Au Grat - the creamy, potato-y, rosemary-y pizza of your dreams. Sign-ups for Friday’s drop will open around 8pm tonight 👀

Thanks to our friends new and old who came out yesterday for our first drop in a while. In 2021 we raised enough in donations to the Community Foodbank of NJ to provide over 6,000 meals for our hungry neighbors and 2022 is off the a great start.

Pizza 1: Stuffing seasoned crust, caramelized onion gravy base, crispy sweet potato hash, root beer poached turkey, balsamic cranberry drizzle, shaved cheddar, and some sliced green beans (mainly for color, but they were OK)

Pizza 2: Baked ziti pie, because all Italian households have a pasta course for Thanksgiving

We decided to break out the Ooni today for some Neapolitan pies. Nice and light. Good stuff.

Crazy that summer is, like, over already…

And while I’m clinging to the final days of local tomato season, I had to do a nice bruschetta pie (even though only some of these are Jersey tomatoes 🤫).
