The Hario V60 is arguably our favorite brewer. It's inexpensive ~$50, and it gets similar results to the Chemex (with a little more "bite" and not the bitterness of the French Press). The only downside is that it only makes enough for 1 or 2 people.

Cold Brew! We're very close to releasing. Here's a quick update:
Step 1: PRODUCT
We wanted to get the bean blend, roast, and grind just right. This IS the product, so we wanted to spend the most time here. We settled on a blend of Mexico Chiapas, Brazil Serra Negra, and Ethiopia Yirgacheffe to give us a balanced profile with low acidity and bitterness.
Step 2: PACKAGING
In order to get the right extraction based on the 1:16 Golden Cup Standard (https://sca.coffee/research/coffee-standards), we honed in on 50g sealed filter packs. Drop two in a 48oz pitcher, fill up with 4 cups of filtered water and leave in the fridge for 20-24 hours (depending on taste). Once done, add 2ish cups of water to dilute to taste. Put some ice in a cup, a little bit of cream, and pour in the cold brew. Easy peasy.
Step 3: ECONOMICS
Some people start here...we do not. Based on the amount of coffee and time to hand-package, these will probably be in the $15-18 range for 6 filter packs, which will make 3 full pitchers worth.
RELEASE DATE: As long as packaging and labels are on time, we're looking at releasing them to the online store on the First Friday of Lent, Feb. 24th.

What is that “P” number at the top of our importer samples you say?
It’s the lot number, which is traceable to a specific farmer, lot number, and harvest date. This is very important to us in specialty coffee. The farmers we buy from must be in the coffee business for the greater good within the coffee world (i.e. fair pay, equity, etc) With traceability, we have full confidence what we’re buying and who we’re buying it from.
As for what we’re sampling this week, we’re looking into Swiss Water process decaf and how it retains bean flavors, and trying multiple grades and farm lots for our cold brew blend, which is coming very shortly.

Still working on some things for the release of our cold brew blend in the next couple weeks. It will be a blend of Mexico Chiapas, Ethiopia Yirgacheffe, and Brazil Serra Negra. We’re considering a super simple method, drop-in filter bags, as seen here. We’re testing sizes and brew length, but production will be similar to our tests. Can’t wait to get these out fully before Spring.
