Elemental Chef

This one makes me smile. 😁
Some dishes are not always what you think. Lol

The ingredients are diver scallop, potato, and a Demi glacé. What does it look like though? 😬

This is actually:
- Poached and seared Yukon gold potato
- Scallop mousse
- Soy-mirin Demi glacé

Story behind this, A few weeks ago I thought it was funny that the classic dish “scalloped potatoes” didn’t have scallops in it. I know it’s a technique, just thought it was funny… so I made a different version of “scallop’d potatoes” for an Amusé the other night.

At my job I get to create some fun stuff. A couple of weeks ago I posted about sometimes having to think on the fly. Well, funny story time…

We usually confirm the number of Amusé’s at the beginning of the shift and on this particular day we didn’t have any on the books. Then during service the Maitre d’ ask for a few that I guess were accidentally left off the books. No problem. I whipped up an amuse with some extra pork belly. Then they asked few more, so I prepped extra just in case any more fell through the cracks.

A couple of minutes later a manager came back and asked for 6 more Amusé. Haha! I was ready, I prepped extra last time! 👍
… then they said, “ none of them eat pork, 1 person is a vegetarian, and 2 of them are kids.”
… 😦🫤… so 3 different Amusé, all different from what I just prepped. 😂 okie-dokie! I cook for all, let’s go!

Well, here is what I came up with on the fly (I didn’t have much time so this was th only picture I managed to get) :

- Citrus cured snapper on garlic crostini, with a cilantro lime micro green salad, and sweet pickled jalapeño
- Sautéed Miatake mushrooms, garlic Parmesan crème friache, aged balsamic, and micro arugula, on spelt toast
-Shrimp, cocktail sauce, and something green to be tossed aside by the kid.

⭐️ FYI: An Amusé buche (Amusé) is a complimentary 1-3 bite, fully composed, dish that is usually offered as a gift from the chef/manager/owner to VIP’s and/or anyone we signify as special.

This slider bun is pretty happy and so are we! Today was a great day at 3 Daughters Brewing. This was our first big food truck rally and we didn’t know what to expect.

Yesterday we had to make the difficult decision to cancel our appearance at Crooked Thumb Brewery. Our oldest daughter developed a high fever that required medical care. We are thankful for a “normal kid virus” but considering the situation we felt we needed to be extremely careful and keep the truck closed for the weekend.

Additionally, late last night our two employees were in a severe car accident. Thankfully, everyone is okay other than bumps and bruises. They will need a few days to rest and we encourage them to take as much time as they need to heal.

☀️☀️In hopes of looking on the bright side of things this means a NEW specialty menu when we reopen on Wednesday at The Wicked Pour. Keep an eye out for brunch at Two Shepherds Taproom on Sunday, January 10th. 🐾 ☀️🍔👨🏼‍🍳

Thank you all for your continued support. A huge thank you to Duck_the_chef for substituting for us at Crooked Thumb yesterday. 🙌🙌 and thanks to the team at Crooked Thumb for being so understanding. We owe you BIG!

Since it’s the day where we all brag a little extra (rightfully so 😜) about our hard work, I thought it would be fun to use Saturday as the day where we tell the story of how we got here.

How exactly did this family decide to open a food truck in the middle of a pandemic?

Ha! Totally not the plan. Let’s backtrack...

Part 1:

Together for almost 17 years and married for 13, Elijah and Ashley have learned while they are good in business on their own, they are great when they do it with each other. Elijah previously owned a catering company in Orlando. Elemental Chef offered private chef services as well as some of the most unbelievable private events you have seen. In addition, Ashley has been a teacher for most of her career and owned a homeschool program. Some health issues in 2016, led them to close the companies and return to corporate life.

Or I guess...they thought so right? A few years later, they decided to take a huge leap and move to the beach! A corporate relocation brought them to Tarpon Springs, Fl. Well, business and a pandemic had other plans for them earlier this year.

And here is when they started writing SOL Burger’s story....

The gloomy weather forecast gave Elijah and Ashley an idea. The tomato basil soup and grilled cheese have been popular so we thought we would add another option to the menu this week.
