The Daniel Fast is a great way to start the year. Cleansing the gut first with an elimination detox of mostly citrus and on to a full 21 days of pulse. This allows your mind, body and spirit to reset and prepare yourself for a year led by the Lord. My first meal is an organic tofu veggie scramble with vegan spinach tortillas.

When a friend offers you a huge bag of apples from her tree then you make Apple Butter and can them. These apples will cook down overnight with coconut sugar, fresh nutmeg, cinnamon, pink Himalayan salt, and cloves. Stay tuned fir canning process.

Since good Chinese food is hard to find in my area, I prepared chicken larb lettuce wraps, kung pow shrimp and some steamed red bean buns.
Vegetarian Sunday has comfort written all over it. Sautéed mushrooms and spinach tossed into spinach raviolis with a bechamel sauce and a sprinkle of Parmesan cheese.
Day 21 of the Daniel Fast. Vegan red curry over brown rice. Really yummy and I bumped it up with some red chili paste for extra heat 🔥
Day 19 of the Daniel Fast has me thinking of Asian cuisine. I prepared a vegan Shoyu Ramen.
Daniel Fast 2020 has my creative juices flowing. Organic tofu scramble with red bell peppers, spinach, and scallions topped with avocado and a side of baked sweet potato wedges.
Cooked up a feast for the birthday boy! We have been married for over half of his life and it just gets better every day! So thankful for all of our family and friends who came out to celebrate my hubby's birthday! May God continue to bless him and keep him healthy and safe🙏
About last night... Love it when a restaurant does not have a pre-fix menu. The farm to table menu was so scrumptious and the hand crafted cocktails were shaken to perfection.
