We are at it again. 40lb of pulled pork coming right up. What a nice thing for Merle to do on a beautiful Friday.
This couldnât have worked out better! And itâs tender deliciousness. Now we know we can do this in the big smoker with 3 different sizes at once. Left it wrapped and refrigerated for 2 days. Chill than slice. All moisture is retained. Reheating shouldnât be an issue if the cooks are any good.
My 1/2 sheet short cakes flopped. So much for that idea. Fresh fruit will be good enough!
After the briskets are sliced, We have cheese to grate yet and dessert to make.
10lb of grilled and chopped chicken tenders in salted broth for flavor and moisture till it is put into the home cooked Alfredo sauce to serve over homemade Italian pasta!
Hey! The briskets are coming off! This is sooner than we expected. Now Iâm going to make a brisket broth for some moisture. after the brisket is chilled, we will slice it thin and add some seasoned broth for reheating purposes. đ

It is finished! 23 lbs, 9 hours on the smoker. Itâs carved, and the flavors will only get better as it goes through the meat. I lay the seasoned skins on top. It will get reheated in my cast iron Le Creuset pot tomorrow before consumption.đ€€

We smoked a 10 lb pork loin and glazed it with a fig/thyme/ mustard glaze.
Chickens are ready to eat.
