Ingredients
2 russet potatoes
1/2 stick butter
1 t garlic powder
1 t thyme
1 t sage
1 t parsley
Salt
Pepper
Olive oil
Directions
1. Preheat oven to 425°F
2. Wash potatoes
3. Lay down chopsticks or butter knives, and place the potatoes between them (this is so you don’t cut all the way through the potatoes)
4. Cut thin slits in the potato
5. Coat potatoes in olive oil and season with salt and pepper. Bake at 425°F for 30 minutes
6. While potatoes are baking, melt butter and then mix in 1 T olive oil, 1 t garlic powder, 1 t thyme, 1 t sage, and 1 t parsley
7. After 30 minutes, remove potatoes from oven and coat with half of the butter mixture, making sure to get it in each slit. Place back in oven for 30 minutes
8. After 30 minutes, repeat with the rest of the butter mixture. Place back in oven for 20 minutes
9. Remove from oven and plate. Pour any liquid from the baking sheet over the potatoes

Ingredients
1lb chicken breasts
4oz cream cheese
1/2 c chicken broth
1/2 packet of ranch seasoning
2 cups of shredded cheddar
1/2 cup chopped bacon
Directions
1. Cut cream cheese into cubes and chop bacon
2. Add chicken, cream cheese, chicken broth, and ranch seasoning to an instant pot
3. Cover and pressure cook on high for 15 minutes. Manually release pressure after 15 minutes
4. Remove chicken and shred it, then add back to the instant pot
5. Stir in bacon and cheese
6. Serve in a bowl as a dip
This can be done in the crock pot as well, just set it to high for 7 hours, then shred the chicken and add in cheese and bacon

Ingredients
1/2 onion finely chopped or grated
3/4 c torn white bread
1/2 c milk
1.5lbs ground beef
1lb ground pork
1/4 c parsley
1/4 c Parmesan
Salt
Pepper
3 cloves of garlic (for meatballs)
2 eggs
2 cloves of garlic (for bread)
Olive oil
Sub rolls
Provolone cheese
Your favorite sauce
Directions
1. Set oven to 400°F
2. Shred or dice onions, shred bread, add both to a bowl and add milk
3. In another bowl, mix together ground beef, pork, parsley, Parmesan cheese, salt, pepper, eggs, garlic, and bread mix and mix well
4. Roll into even balls and placed on a greased baking sheet. Bake for 15-20 minutes until internal temp reaches 160°F
5. Add to a pot of sauce while you prepare the rolls
6. Mix garlic, olive oil, and salt in a bowl. Spread it across the rolls. Toast the rolls on broil until toasted
7. Add meatballs, provolone cheese, and parmesan cheese and place under broiler to melt the cheese

Ingredients
3lb chuck roast
4 guajillo chilis
2 ancho chilis
4 cloves garlic
1/2 cinnamon stick
2 cloves
1 T oregano
1 T thyme
1 t black pepper
2 T beef base or bouillon
3 bay leaves
Olive oil
Salt
Pepper
Water
Oaxaca or Monterrey Jack cheese
Tortillas
Chopped onions
Chopped cilantro
Directions
1. Remove seeds from chilis. Add them to a sauce pot and cover with 2 cups of water. Heat on high heat until boiling, then remove from heat, cover with a lid, and let sit for 5 minutes. Discard the water after 5 minutes
2. Add chilis to a blender along with garlic, oregano, thyme, salt, pepper, cloves, cinnamon, 1 T beef base, and 4 cups of water. Blend until smooth and set aside
3. Cut beef into cubes and season with salt and pepper
4. Set instant pot to sautee, and add 2 T of olive oil. Brown beef on all sides and set aside
5. (Optional) strain sauce through a fine strainer to remove chunks and pour into instant pot. Add bay leaves, 1 T beef base, and 2 cups of water
6. Using a wooden spoon, scrape up brown bits from the bottom of the instant pot
7. Add in meat. Place lid on and set to pressure cook for 45 minutes
8. Manually release pressure when cooked
9. Shred beef
10. Dip corn tortilla into broth and place on a hot cast iron skillet and cook for a few minutes on one side and then flip
11. Top with Oaxaca cheese and beef and cook until melted
12. Add cilantro and onions

1/2 jalapeño cut into slices
2 T agave nectar or simple syrup
1.5 oz mezcal
1.5 oz tequila
Grapefruit soda
Limes
Lime juice
Tajin
Directions
1. Add jalapeño slices and agave nectar to a cocktail shaker. Use a muddle to infuse the jalapeños into the agave nectar
2. Add mezcal and tequila to shaker and shake
3. Rim a glass with lime juice and tajin and add ice to the cup
4. Pour the jalapeño mix over the ice
5. Top with grapefruit soda and lime juice
6. Garnish with a lime

2 ripe tomatoes

Directions
1. Preheat oven to 425° and place bacon on a foil lined baking sheet. Bake bacon until desired doneness is reached (10-15 minutes)
2. Chop lettuce, slice avocado, and slice tomatoes
3. Chop bacon
4. Toast both sides of the bread and then spread mayo on each slice
5. Lay down avocado slices and chopped bacon
6. Add tomatoes and season with fresh cracked pepper and salt
7. Top with lettuce and the other toasted piece of bread
