Yesterday Chris and I got a suite room at the casino to celebrate our friend’s birthday and I ended up having a few hours by myself to watch a show called “Street Food Latin America”... it got me thinking about these amazing pupusas that I had a few months ago from a local food truck and I just wanted to get home and try my hand at them today. Some are filled with cheese and black beans, and others just cheese (for the boys). They turned out great and I loved making them.

I used my 12” nonstick skillet and my small nylon turner for these guys. Oh- and my hands! 🖐 🤚 I’m looking forward to being able to travel again... I’ve got a bucket list and it’s all associated with food!

Sometimes people ask me, “who is the better cook?” between me and Chris... of course, I say me! But I’m reality, we just make different stuff. Chris spends days and days smoking meat... and I turn the leftovers into yummy family meals! Today I made tamales out of brisket, red chili sauce and jalapeños. 💣

The kids beat me today... after the 14th ornament crashed off the tree I finally broke down. I have been limiting my alcohol and carbs in an attempt to lose some weight... but tonight, it’s booze and biscuits! (With gravy of course!) this is a 12” nonstick from pampered chef, the second round of biscuits in the batter bowl (full size) and the first pan of biscuits on the pampered chef cookie sheet! ❤ shipping has been reduced to only 5-10 days (rather than weeks!!!) now, so let me know if you’re looking for anything new! Is there anything you make because your family loves it, but you really dread doing it?? I found a new deviled egg back (new to me??) to crush the yolks with the mix n chop! 🤯 Happy Thanksgiving, Friends!

There’s something so satisfying about a beautiful pie! The “cheesecake” (it’s a no bake/ family tradition only some will understand) is in the fridge... The cranberry sauce is made with a special addition of sweet lavender wine and orange juice! Yum! And now I’m brining my turkey. Anyone else prepping for the holidays? What kinds of pies or desserts are you making?

Update to add the cheesecake and a banana cream base. ❤ 3/4 desserts down... just one apple pie and we’re ready to go!

Yesterday it was the puke-pudding, and today I successfully made a donut pizza. 😂 I’m feeling like Julia Child with my cooking flops, and laughing through every minute of it!

Here’s the story: I have moved to a Keto/alcohol-less (not none at all...) diet through the end of the year and then some to try to shed some of the Covid-19. Today, I couldn’t say “no” to homemade pizza when Cash whispered it to grandma as his big surprise for the night. F**k it, indulge the 4 y/o. Make the pizza, make a mess, have fun and love every minute of it.

(Oh yeah, the story...) I usually pre-heat my pizza stones to 450* before assembling the pizza on the hot stone. I didn’t do that this time, so I ended up moving the pizza off the stone to the oven directly after about 20 minutes. The middle of the pizza fell right through the bottom of the oven rack- onto the second pizza. Fail? Yes. Still good.

I used the pizza peel (omg love) the stoneware sheet, pizza round, and my batter bowl with lid (to raise the pizza dough)... oh, and of course my beautiful PC rolling pin!!

The recipe was easy:
4 cups bread flour
2 teaspoons salt
1 teaspoon sugar
1 package (2 1/4 t.) rapid rise yeast
2 T plus 2 t olive oil
1 1/2 C water
+1 hour to rise 🙂

I used my stand mixer, so no kneading necessary.

I hesitated to post this because it looks like an unfortunate combination of stuffing and things I won’t mention on a baking page! 😂

I make bread pudding a lot because the local Franz sells burger buns to Chris, and for every $X amount of money spent, he gets free (usually near expiration) breads. I let the boys tear the pieces of bread up because it was hard to cut with the dull butter knives i was willing to let them use! Then we tried a fall season combo of pumpkin pie and bread pudding.

You can make bread pudding with just about any dairy you have, eggs, oldish bread and lots of spices. I added a can of pumpkin and eggnog to this mixture and the boys think it’s great with a big dollop of whip cream! ❤

I used the small egg whisk, batter bowl and plastic cutting boards to make this dessert. The boys say it is a success!

The boys and I have been practicing cookies for Santa! ❤ This morning Chase grabbed his chair and got into the cupboard for sprinkles, and I couldn’t say no!

The recipe is the Tollhouse “Oatmeal Scotchie” straight off the back of the package! If you love the flavor of oatmeal cookies, but prefer them with chocolate, you can switch it out!

1 1/4 C. All purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup butter (I split this 50/50 with Crisco)
3/4 C. granulated sugar
3/4 C. brown sugar
2 eggs
1 teaspoon vanilla
3 C. Old fashioned oats
1 package butterscotch chips
(Don’t forget the sprinkles!)

I bake them at 350* for about 10-12 minutes until just toasted on the bottom!
