A friend of mine recently asked me what the difference between a cook and a chef is. Once upon a time, when I was young and inexperienced, I would have said culinary school, or being an apprentice under a head chef until you are promoted, now I know the true difference, and it’s simple. A cook follows a Chefs directions and recipe, a Chef creates their own recipes and menu. So, if you have a baking or cooking side hustle and you built your own recipes and sell your goods, congratulations, you are a Chef. Despite having gone to culinary classe and doing an apprenticeship under one of Americas top Chefs, and creating multiple menus, and being successful doing so, I still refer to myself as a cook, but that’s because I’m insecure not because I’m not a Chef. Haha.so all you Chefs out there that are still calling yourself a cook, let it go, I’ll start having pride in myself if you will. Big hug.

I never make an Alfredo sauce unless I’m feeling joy, and I never make a roux when I’m sad, or cook when I’m mad. I’ve learned over the years that you can taste the love in my food, but you can also taste the grief. Never feed others your pain, only joy.
