Even as a nurse, and knowing better, I didn’t do better. It took hitting my rock bottom in my health to finally wake up and get healthy. Finding this program, my coach, and this community to get it together was the answer to my prayers for reprieve from the silent prison I was living in. I started the program at 265lbs and lost 100lbs initially, I went on to lose another 20lbs 6 months after reaching what I thought was my goal weight, for a total loss of 120lbs. My ultimate victory came when I paid this gift forward to others by becoming a coach, and ensured my own health to always be a top priority. ¿Busca una versión deliciosa de tacos de cerdo en menos de 30 minutos? Desarrollada por el Culinary Institute of America, esta NUEVA receta Lean & Green rinde 4 porciones (1 magra, 1 grasa saludable, 3 verduras, 3 condimentos) Rellene estas conchas fáciles de queso con lechuga fresca, sabrosa carne magra de cerdo, tomates y aguacate. Termine con una buena guarnición de cilantro. Esta receta no es solo para el martes de tacos.
Ingredientes:
8 oz. queso cheddar rallado bajo en grasa
12 onzas. lomo de cerdo, en rodajas finas
¼ cucharadita de sal
¼ de cucharadita de pimienta negra molida
1 cucharada de condimento para tacos
8 tazas de lechuga, picada
1 taza de cilantro, picado
2 tazas de tomates frescos cortados en cubitos
3 onzas. aguacate cortado en cubitos
Direcciones:
Para hacer tacos:
1. Divida el queso en 8 porciones (1 onza).
2. Cuelgue una cuchara de madera o una vara de medir sobre 2 latas o cajas. Coloque un trozo de papel de aluminio sobre la parte superior, presionando ligeramente para formar una forma de taco (el queso se colocará sobre la parte superior del papel de aluminio para formar tacos en el paso 6).
3. Encienda el asador en un horno u horno tostador.
4. En un lado de una bandeja forrada con papel pergamino, extienda una porción de queso en un círculo de 6 pulgadas; repita para hacer un segundo círculo de 6 pulgadas en el lado opuesto.
5. Asar hasta que estén crujientes de 5 a 7 minutos.

Ingredientes:
27 oz de pechuga de pollo cruda ~ Rinde 18 oz cocido (3 magros)
1 cucharada de aceite de oliva dividido (3 grasas saludables)
1/4 cucharadita de pimienta molida al gusto (1/2 condimento)
1/8 cucharadita de sal marina (1/2 condimento) 1/2 cucharadita de condimento italiano (1/2 condimento)
4 dientes de ajo picados (4 condimentos)
1 1/2 taza de leche de almendras (1 1/2 condimentos)
1 cucharada de harina de almendras (1 1/2 condimentos)
3 tazas (9,3 oz) de cabeza de brócoli picada (6 hojas verdes)
2 cucharadas de perejil fresco picado (1/2 condimento)
Direcciones:
-Frote el pollo con los condimentos por todos lados.
-Calienta 1 cucharada de aceite en una sartén grande a fuego medio-alto. --Cocine el pollo hasta que esté dorado y bien cocido, unos 6-7 minutos por lado. Ponga a un lado y cubra para mantener el calor.
-En un tazón pequeño, bata la leche de almendras y la harina hasta que quede suave.
-En la misma sartén calienta el aceite restante, a fuego medio. Agregue el ajo y cocine por hasta 1 minuto.
-Vierta la mezcla de leche de almendras y revuelva; deberías ver que la salsa se vuelve más espesa casi inmediatamente a medida que se calienta.
-Agregue el brócoli y cocine durante 6-8 minutos, o hasta que esté tierno.
-Vuelva a colocar el pollo en la sartén y continúe cocinando durante un par de minutos para que se caliente.

Creamy Chicken and Broccoli Skillet
Ingredients:
27 oz Raw Chicken breast ~Yields 18 oz cooked (3 leaners)
1 tbsp olive oil divided (3 healthy fats)
1/4 tsp ground pepper to taste (1/2 condiment)
1/8 tsp sea salt (1/2 condiment)1/2 tsp Italian seasoning (1/2 condiment)
4 cloves garlic minced (4 condiments)
1 1/2 cup almond milk (1 1/2 condiments)
1 tbsp almond flour (1 1/2 condiments)
3 cups (9.3 oz) broccoli head chopped (6 greens)
2 tbsp fresh parsley chopped (1/2 condiment)
Directions:
-Rub the chicken with the seasonings on all sides.
-Heat 1 tablespoon of oil in a large pan over medium-high heat. --Cook the chicken until golden-brown and cooked through, about 6-7 minutes per side. Set aside and cover to keep warm.
-In a small bowl whisk the almond milk and flour until smooth.
-To the same pan heat the remaining oil, over medium heat. Add the garlic and cook for up to 1 minute.
-Pour in the almond milk mixture and stir; you should see the sauce getting thicker almost immediately as it heats up.
-Add broccoli and cook for 6-8 minutes, or just until tender.
-Return the chicken back to the pan and continue to cook for a couple of minutes to heat up.

Raiza - I never thought that after two pregnancies at the ages of 34 and 36, my body would be able to recover again, despite being overweight for 12 years. Two pregnancies with gestational diabetes, at risk of becoming diabetic. Anyway, this health program is wonderful and works 100 percent. The most important thing is that it is very nutritious, it is a lifestyle and it helps you maintain your healthy weight !!!

Cauliflower Pizza bites will be on the menu this week. I cannot wait!
Ingredients:
* 2 1/2 cups (8.8 oz) riced cauliflower - (5 greens)
* 2 eggs - (2/3 lean)
* 1 cup (4 oz) reduced-fat shredded mozzarella, divided - (1 lean)
* 3 Tbsp. grated parmesan - (3 condiments)
* 1/2 tsp Italian seasoning - (1 condiment)
* 1/8 tsp salt - (1/2 condiment)
* 1/4 cup low carb marinara sauce - (1 green)
* 5 1/4 second sprays of Cooking spray - (1/2 condiment)
* 1.6 oz turkey pepperoni slices, chopped - (1/3 lean)
Directions:
1. Preheat oven to 400 degrees F.
2. No need to pre cook cauliflower! I blended the cauliflower “rice” it in my blender to make it finer.
3.Then add eggs, 1/4 mozzarella, parmesan, Italian seasoning, and salt to the cauliflower.
4. Divide mixture evening amongst 12 slots of a lightly greased standard-sized muffin pan. Press down lightly to form mini crusts. Bake for 20 minutes.
5. Top each mini cauliflower crust with tomato sauce, remaining cheese, pepperoni. Bake until cheese is melted, about 5 to 7 minutes.
Makes 2 full lean and green meals with 3 condiments. 6 bites make up one serving of a lean and green
